Instant Pot Slow Cooked Cornish Hen
I actually had a taste for Cornish hen and at the same time I want to keep it simple this time without the need for adding as few ingredients as possible. So hear it goes. I was hungry when I came back from the store later that morning after my visit at my podiotrist’s office. I stopped in at Farm City my zabiha halal store on the way home since it is very close to home and not out of the way. I went in looking for kala zeera (black cumin) and kala elachi (black cardomom). This is Urdu translated in to English for the spices I was looking for.
However this is not for this recipe at all whatsoever. I got some zabiha halal beef salami, balongna mortadella and beef burger patties along with a couple of Cornish hens which was for dinner. This is what was in my yummy dish. Place 1 pint of water in the inner lining and set the trivet in there and the baking dish made for instant pot which is small enough to fit in and yet just big enough for the Cornish hen.
I added 1 pinch of habenero infused sea salt. This sea salt can be either plain or flavors of chilies or smoke. The same amount can be added of either vegtea seasoning, pink salt, kosher salt, bullion, adobo or goya seasonador. To mortar and pestle add 1 pinch of peppercorns of any color and grind in to a powder. Add 1 pinch of any herb of choice. My choice was drumstick leaves I have frozen in the freezer. This can be bought in Indian markets. Add 3 shakes of Mrs. Dash and or lemon pepper.
Add 1 tsp of cooking oil of choice such as peanut, corn, canola, flaxseed, sunflower, grapeseed, avocado, vegetable, olive, almond or macadamia nut or 1 tsp of butter ghee. Add this before you season your Cornish hen. Select slow cook on high for between 4 to 6 hours.
What else I want to address is that It made its own juice and I did not want it to go to waste so I promptly added some type of grain such as 1 to 2 cups of rye kernals and I pressure cooked this in the instant pot for about 20 minutes then pressed cancel after I hit the release valve then I selected sautè button until it was slightly dry then pressed cancel to turn off the cooker.
I hope you will enjoy this dish, although it is not real spicy at all. You can either have it as spicy or as mild as you want. Have a good meal. Ramadan Mubarak.
