Raw Beetroot Salad Done My Way
Asalamualaykum , Ramadan Mubarak. Actualy it is almost Eid Al Fitr. It will be Inshallah in a few days. This beetroot salad is very good at helping build healthy blood supply in the body. It is very nutitious and healthy because the beets I used are raw and beets are great to eat raw like carrots, cucumbers and spinach. Only cucumbers you do not cook and radishes are another but we are only dealing with just beets today.
Take 2 beetroots depending on how many people eating with you and this recipe can be either doubled or trippled. Scrub the beetroots very well under cold running water and please do not peel them. I never peel beets. Cut the ends off and dice the beets and place them in a bowl. This gets thrown in there together. Also chop either 1 onion or shallot or 3 green onions, mince 2 cloves of garlic finely. Chop 1 green chili.
Add 1 pinch of any herb of choice such as chervil and mint which I added but you can use either parsley, lovage, savory, basil, oregano, rosemary, thyme, tarragon, marjarom, chives, dill weed or even cilentro depending on your taste or you can add to a mortar and pestle 1 pinch each of any color of peppercorns, kalonji, cumin seeds and 1 tiny broken piece of cinnamon and grind in to a pestle. Add this too the beets in the bowl along with 1 pinch of sumac instead of the herbs that I mentioned above.
Here you can roast 1 pinch of either sesame seeds or even flax seeds in to a dry wok or skillet to roast and add to the beets. The nuts can be either roasted or raw it is 10 peanuts, almonds, hazel nuts, pecans, cashews, pistachios, Brazil nuts, macadamia, walnuts, pine nuts, sunflower seeds or pumpkin seeds. These get chopped in a food processor. Just one blitz will do because you still want them to be coarse. If small do not bother. Also 1 pinch of either chia seeds or takmaria can be added.
Add 1 pinch either of pink salt, kosher salt, sea salt, bullion, goya seasonador, adobo, vegtea seasoning, seasoned salt or mrs dash. Add either 3 tbs of either white, apple cider vinegar, balsamic, lychee vinegar, rice vinegar, cane vinegar or wine vinegar. The oil used is 3 tbs of either hemp seed oil, olive oil, walnut oil, flaxseed oil, almond oil, sesame, coconut or even macadamia nut oil, mix and enjoy.
I later added 1 can of quail eggs to this which has been already hard boiled in a can. All I did is I drain and rinse them or hard boil 2 chicken eggs for 10 to 15 minutes then peel and cut in to quarters and enjoy in this lovely salad. It is great for lunch and dinner as a side dish to any piece of protien you may have. If you are using a green chili just be careful not to add sea salt that is already infused with chili powder. If you plan on using this then omit the chili. If you do not like anything spicy then it is ok not to add the chili at all that is if that is what you prefer.
