Vegan And Sugar Free Jelly Desert
Hello wonderful people, how are you today? I want to let you know that after I became diabetic that I thought I would have to give up desert for good. There are some that don’t care about what they eat and boom they end up with amputations, becoming blind, having leg ulcers, kidney, heart and other serious health problems because of them not watching what they are eating. I have been seriously taking care of myself and I stumbled on some agar agar on my shelf. It sat there for a while so I wanted to take it out and use it. I write for all peoples that has special diets because of reasons of religious and or health/ medical. Also my blog is about inclution not exclution.
However it is kind of like vegan jelly and this is suitable for everyone including vegitarians and vegans too. What you need to do is add 1/4 cup of fresh fruit that you can have sliced or cubed if it is a bigger piece of fruit. Berries like blueberries and rasberries you have to leave whole, cherries need to have their pits removed before using. Wash these and place these in a bowl. Also you can puré the fruit in a mini processor. Whole blueberries and blue edible cornflowers were my choices.
Add either 2 packets of stevia or splenda 4 tbs of agave necter from regular grocery stores, sugar free syrup from Middle Eastern grocery stores or monk fruit sweetener from Amazon, 1 pinch of edible flowers of choice from Amazon, 3 tbs of coconut milk from many Asian stores, 1 pinch of choice of powdered food coloring and 1 drop of essence of choice from Indian and Pakistani grocery stores, 1 pinch of dry edible flowers of choice from Amazon.
In a small pot add 2 cups of water and bring to boil on high heat and add 6 tsps of agar agar from either Walmart, Asian stores or Amazon. Whisk to stir it in until it is blended and starts to thicken. Add the food coloring for which I used blue, for sweetener I used agave and I used 1 drop each of almond and vanilla essence. There are others too such as pineapple, orange, rose, kerwa, etc…. Add to the dish where the fruit is in and I did not add coconut milk but I garnished it with another pinch of dry edible flowers and you can also use 1 pinch of either frozen grated coconut or desiccated coconut. I added desciccated coconut. Also you can take your choice of nuts depending on what you have here at home by chopping up to 15 in a mini processor and sprinkling it on top.
This jelly sets as it cools so work quickly and let it sit at room temprature for 1 hour then place in the refridgerator to chill for 3 hours before cutting in to sqares and eating. This I hope and pray will be a hit with many of you that read my blog posts. I know what it is like going to a resturant and I can’t eat a thing because of religous reasons. Even if they serve beef or chicken etc. I don’t eat meat until it has the blessing of Allah said over it before it is slaughtered. Plus there is a lot of bad food in the restuarants. Hardly any of them are healthy. Also now being diabetic I find it more daunting so I cook here at home. Besides I want my readers to learn now to cook in their own kitchens and try out my recipes and let me know how it is working for them. Peace out!!!!!!!!
