Hello there lovely people. I went through my photo sharing archives called one drive by Microsoft the other day. I found several old pictures and I desided to write a blog post about them. This is one and there are a couple more. This is a Turkish bread and it is very yummy and can be served with some Turkish dishes like yogrutl ispanak meaning yogurt and spinach or it can be made in to a mini turkish pizza which depends on you and what you want on it.
Now we are going to start cooking and it is very simple to make and I have a very strong pair of hands too. In a large mixing bowl that has a lid to go with it add 1 cup each of all purpose unbleached flour and whole wheat flour, either 1 pinch of kosher salt, plain sea salt or pink salt, 1 pinch of turbindano sugar, 3 pinches each of baking powder and yeast, you may use 1 packet of yeast if yours does not come in a jar or a bag. Rapid rise yeast is great.
Add either 1 whole egg or 2 tbs of powdered egg, 1 handful of powdered milk like either nido or carnation, if you have powdered yogurt by Hooshier Hill Farm which is bought on Amazon or 3 tbs of plain yogurt. You may sift this by using a flour sifter if you have one or improvising by running these powders through a seive and using a spoon to rub against the sides until every bit of the dry flour mixture is sifted in to the bowl. If using a fresh egg you can crack it and add it to the sifted flour mixture. Also the plain yogurt can be added after the egg too. Mix and add 1/4 cup of water a little at a time and keep mixing with your hands to form a dough. You my need just a wee bit more water and you do not want a soft dough or a batter you want a dough that is firm for this just like if you are making bread.
Pide is a Turkish bread like I said before. Once the dough is made add either 3 tbs of either olive oil, hemp oil, peanut oil, walnut oil, canola oil, corn oil, sunflower oil, safflower oil, grapeseed oil, coconut oil, almond oil, hazelnut oil, flaxseed oil, macadamia nut oil, avocado oil, vegetable oil, almond oil or butter ghee. Kneed the dough and place in a large bowl with a cover on it and place in a warm place like on your kitchen table in a very warm kitchen for 1 hour. Set the timer on the microwave for 60 minutes. Punch the dough cover again and let it sit for another 1/2 hour.
Use either a cast iron skillet if you are using that very hot oven in the kitchen or small pizza plates that is made for multi functional cookers such. as Instant Pot sprayed with cooking spray. The cooking temp should be 375F or 200C. Place the dough for the pide and roll it out with a rolling pen. It is similar to making pizza in a way and it must be flat. Place them in either the cast iron skillet or even the pie plates and either sprinkle with 1 pinch of poppy seeds, sesame seeds, or kalonji. The indian and Pakistani grocery stores has kalonji or you can go a little bit more nuts and add some crumbled feta cheese or goat’s cheese also. Even sheep’s milk cheese works also and there is even some vegan cheese that has a feta cheese flavor too. Adding a few pieces of anchovies, olives either green or black, either sliced zabiha halal pepperoni or sucuk which is a delightfully spicy smoked Turkish sausage.
It is so yummy I can’t get enough of it and I swear it is the bomb. World Fruit Market here in Chicago on Devon ave. sells it and Farm City may have it too. Also you can even add pickled artichoke hearts too and season it with 1 pinch each of thyme, oregano, basil, mint, or even rosemary. Other toppings may be other types of cheese as well, sardines and other types of canned fish too. Even onion, mushrooms, bell peppers of any color also may be added and some giadanara or even banana pepper and cubanelle pepper too as well. Bake in the oven for 12 to 15 minutes. For Instant Pot and the like, place the trivet inside and the baking pan with the pide in it and place the air fry lid and select bake then the temp and you can hold the button on your cooker to change from Fahrenheit to Celsius and back again if need be. and set timer for 25 minutes. Please do not add so many topings that it would melt and get all over the place because it can be extremely messy.
Enjoy this with either turkish coffee, tea, kawa, or even lassi. The Turkish people calls it ayran and Arabs calls it leban besides all I know it is just plain delicious.
