Ethiopian Mulmul Bread In Banana Leaves

Heys folks again from post archives which I haven’t written about the item on the left is the star of the show this time while the one on the right of this photo above is none other then fasolia which I covered in a previous post so the dish on the right is very irrelevent. However I will link you to this recipe on the right to cut down the confusion. I am putting the link here, Fasolia An Ethiopian Green Bean Dish. Now on to make the mul mul bread which is the star of this show what you will need is 1 large mixing bowl to mix the dough in, 1 cup each of all purpose unbleached flour and whole wheat flour which gets sifted. Add 3 pinches each of baking powder, yeast that is either in a bag or a jar. I use the rapid rise yeast. Addd 1 pinch each of xantan gum, either pink salt, kosher salt or sea salt, turbindano sugar, 1/4 cup of room temperture water. Make in to a dough using a little water at a time kneading as you go. When the dough is made then add 1/4 cup of olive, corn, canola, grapeseed or vegetable oil. Knead some more then cover the large mixing bowl with the lid it came with or plastic cling wrap and let sit in a warm place near the stove but not on the stove to let rise for 30 minutes.
Set oven temp to 400F or 200C. Punch the dough and let rise again for the same amount of time as before. Take a baking sheet or even a large bread loaf pan and lay 2 sheets of banana leaves 1 at a time then spray with cooking spray. Repeat with the others until dough is used up. Shape in to long loaf or loaves and wrap the dough in banana leaves. Let proof for 10 minutes then place in the oven. Bake for 15 minutes and test by using a fork or toothpick to see if it came out clean. If it is still doughy then place for another 5 minutes. If using an instant pot then make smaller long loaves and wrap in banana leaves after spraying them with cooking spray and pop in to air fryer basket and place air fry lid and select 400F for 12 minutes then check for doneness. If doughy then select bake, keep the temp the same but the time is 4 minutes and click start.
Let cool then unrap and enjoy with soup also this is ideal for people like Mr. Riaz who does not like injera. You can also enjoy this with your. morning breakfast with eggs too if you wish.
