Stuffed Artichoke Hearts

Hey guys I again dug up from my photo archives of onedrive and shutterfly and I am writing another delicous recipe which is so amazing. It is one of my favorites. I am placing the other image to this very same dish so you can see the comparision. Look below on the offset because not everyone likes cheese on their food.
The one on the right is without cheese while on the left has cheese on it. For vegans and vegetarians please do not vex because I got your back on this one too. First to make it easier and it is more cost effective is you use between 1 or 2 bags of frozen artichoke hearts. Lots of stores carrying Middle Eastern groceries my have them. Place them in a large cast iron oiled with either 4 tbs of olive oil, butter ghee or grapeseed oil. Vegetarians and vegans may want to omit the butter ghee and use olive or grapeseed oil instead.
In a pot or another skillet you may have add 1 oz of either olive oil or grapeseed oil or 4 tbs of butter ghee on high heat. Preheat the oven to 400F or 200C. In mortar and pestle add 1 pinch each of black peppercorns, cumin seeds, coriander seeds, fenugreek seeds, 4 allspice berries, 2 cloves, 1 broken piece of cinnamon stick and grind in to a coarse powder. Set this aside for the time being. Add 1 onion or shallot to the pot or skillet and brown them, add the contents of the mortar and pestle, 1 pinch of sumac, 1 bay leaf, 2 cloves of garlic choped. Add either 1 pinch of sea salt, pink salt, vegtea seasoning, kosher salt, 1 bullion cube, basil oregano, mint, thyme, 3 dashes each of maggi or knorr aroma and balsamic vinegar.
Add 1 lb or 1 kg of either beef, chicken, turkey, veal, lamb or goat mince for omnivoures and carnivoures, or for vegitarians and vegans add 1 bag of veggie crumbles by either beyond meat, boka or Morningstar farm, also you can use Auguson Farms dried veggie crumbles. Gardien too has these too. The Auguson Farms one that you have to follow the directions on the can to rehydrate these things and Amazon and Walmart has them. Actually the Auguson Farms is a meat substitute that is immitation chicken and immitation beef flavor. Besides it is safe for everyone besides I am Muslim and therefore if it was haram it would not be in my house period.
Everyone else can add 1 small bag of frozen mixed vegetables in he meat or veggie crumble mixture. Cook this for 15 minutes on low heat. Add 3 tbs of capers and 10 olives crumbled and add a drop of the brine. You do not want to add to much then it would become too salty. Take 3 tbs of cornstarch or arrowroot starch and 1/4. cup of water to make a slurry and add to the meat or veggie crumble mixture and stirr until you see a thick gravy. Turn heat off and spoon these in to the artichoke hearts: besides they look like little cups with a tablespoon. Two to Three tbs at a time is plenty.
Also you may want to do this in an Instant pot too if you wish by greasing the baking dishes compatable with this and add a trivet for pot in pot method at the same time and temp as regular oven. You can either leave as it is or add any type of crumbly white cheese you desire. For vegans and vegetarians you can use vegan cheese too also if you are lactose intolerant. I would suggest goat’s cheese, provolone, mozzerella, farmer’s cheese, feta cheese, parmasean, romano, asiago or fantina cheese. There is even vegan versions of some of theese cheeses as well myoco’s creamery has some delicious vegan cheese and there is dayia brand too. You may want to check them out also and Cermac here in Chicago has it.
Pop these in a regular oven to bake for between 15 to 20 minutes or in the Instant Pot by selecting bake 400F temp and time 15 minutes and tap start after you attach the air fry lid. If you added cheese then you can see it is very bubbly and it is a wonderful taste and great to eat with pita bread or even bulgar or rice. The beverage of choice is always black tea or even coffee.
