Different Types Of Dhokla

Hey there I want to address the different typesof dhokla in 1 single post and this is one I made just to try out this recipe. It looked lovely so I decided to take a picture of it before I ate some. This one is rice dhokla and I used 1/2 cup of rice flour and 1/4 cup of sooji. It is also spelled souji too. I added 1/4 cup of yogurt and mixed then added either 1 pinch of eno or baking soda. I added either 1 pinch of pink salt, kosher salt or plain sea salt. Add also 1 green chili and 1 small piece of ginger minced. I added 1/4 cup of water until I had a nice batter and the mixture started to fizz which is what I wanted. I added 3 tbs of either turbindano sugar or agave nectar and stirred.
After I got the batter made then I added 1 cap of either lemon or lime juice. Also 1 pinch of citric acid can be added in its place. Add 1 5sp of either coconut oil, vegetable oil, corn oil or canola oil. Add 1 sheet of parchment paper to a cake tin or pie plate and you can also use instant pot compatible dishes to steam this dhokla. Spray with cooking spray and add dhokla batter to the parchment paper lined baking dishes. Place 5 cups of water in the inner lining of the instant pot, place a trivet and the compatable pan that has the dhokla batter in it. Press steam and cover with a wide top big enough to fit over the cooker itself. Set it for steam and 20 mintes cover and set the time on an external timer. I have a turbo cooker which is what I bought from a tv add a long time ago and I cooked this on stovetop on low setting for 20 minutes. In another pan a small cast iron skillet or a wok add 3 tbs of either corn, canola, vegetable or coconut oil. Add 2 curry leaves, 1 dried red chili either long or round, 1 pinch each of hing, cumin seeds, fennugreek seeds and mustard seeds. let them crackle and add this to the cooked dhokla. Add 1 pinch of greated unsweetened coconut or dessicated coconut, 1 pinch of cilantro, Cut in to pieces and serve.
Also you can Also add if you can use either dal or besan to make dhokla with too. Even pureed vegetables such as peas, corn, carrots or even spinach is a great idea too. Instead of sooji and rice flour you can substitute this for besan or other types of dal flours like moth been, urad ki dal, moong ki dal also then it would be the same masala and everything else like before all you have to do is look up and you see what I mean.^^^^^^^ You can even use 1/2 cup of soaked poha and it could be corn or even rice. I even suggest oats too and all you have to do is take some uncooked oatmeal and place it in the blender and this too is 1/2 cup. Last suggestion is 1/2 cup of buckwheat groats too. this gets soaked in 1 cup of water before using. Even using 1cup of just plain sooji is great too. If using sooji to make dhokla then 1 pinch of turmeric is just plain optional.
If you want the sandwich type make two pie plates of dhokla, Only one does not have the tempering on top and when they cool then make and spread your chutney of choice and invert the other so that would be facing up then add the tempering. This is the masala you have made to crackle by the way. Also if you are going to be using either toor dal, mash ki dal, chana ki dal moong ke dal, masoor ki dal or even black urad ki dal to make dhokla batter, I would suggest 1 cup of dal to 4 cups of water to pressure cook and add 1 green chili and 1 small piece of ginger then pressure cook for 15 minutes in instant pot with the lid on sealing and after pressure escapes then add besan or other types of dal flours of choice for binding after you blend this in to a smooth paste and before you blend while using an immersian blender it is advisable to remove the inner lining from the base before you go to using this gadget. After it is smooth then you can add the 1/4 cup of dal flours for a thickener and then go ahead to steam after you clean the inner lining. You may have to transfer contents to a mixing bowl or if you have a spare inner lining for the instant pot then you can proceed to steam If not you have to wash the one you have after transfering contents. Proceed as follows and enjoy.
