Instant Pot Pan De Agua Puerto Rican Water Bread

A along time ago I made pan de agua which is Puerto Rican water bread and the Ingredients are widely available. I will always do the whole grain version because it is a lot healthier and you add 1 cup each of all purpose unbleached flour and whole wheat flour, 3 pinches each of rapid rise yeast and baking powder, 1 pinch each of xantan gum, baking soda, you do not want to add too much baking soda then it would taste yucky if you do so a wee tiny bit is sufficiant to make it very light. Sift theese together then add either 1 pinch of sea salt, pink salt or kosher salt. Add 1 pinch of turbidano sugar, 1 handful of powder milk, 1/4 cup of room temperture water and make in to a dough a little at a time.
Add 1 oz of either olive oil, canola oil, corn oil or vegetable oil and knead the dough for 2 minutes and make sure the dough is in a ball and pulling away from the sides of the bowl.
Cover and let proof for 30 minutes then knead and punch the dough and repeat for another 30.
For the instant pot add 2 cups of water and press saute button to bring the water to boil and the time will start counting down as soon as it says hot on your cooker. Also if you have another type of multi functional cooker follow the directions according to your owner’s manuel. Use either a trivet or airfry basket and if using the utinsels compatible with multi functional cookers. Place either parchment paper in the baking utinsel or air fry basket or a silpat. Amazon has these items and you may check in to Walmart and Target too. Also dollar stores sell parchment paper and you may spray the parchment paper with cooking spray.
Take the dough and tear it in to 2 to 3 portions depending on how big you want the bread and let sit in the dish covered until it proofs one final time and this will take 15 minutes. If the cooker has not shut off after the water has boiled select the cancel button now and then place the uncooked bread in to either the parchment paper or silpat lined baking utinsel or air fryer basket. Place air fry lid and select bake with temp at 375F for 20 minutes. After this check to see if it is done and if still doughy then again cook for 5 minutes more.
This bread is perfect for anytime especially with stewed beans and a popular stew called sancocho which is an older post of mine and also you can put butter and jam when you eat it for breakfast along with eggs or even with fish salad with avocados, salads or even with canned fish in oil such as sardines or tuna.
Also if you want to bake this in a regular oven then take a big roasting pan 6 cups of water then place a baking sheet over that lined with parchment paper sprayed with cooking spray or silpat at a 375F or 200C oven and this time you can place this in a cold oven to keep from getting burned. Turn oven on and let cook for 20 minutes.
