Hey folks here is a real simpe recipe and actually it is a saved pin on my pinterest and an old picture from an archive which is my insperation. I love looking in various blogs for ideas on what to try and it was the tamalpaku one where I got this idea from. Actually It is gluten free because it only uses amaranth flour. Add 1/2 cup of amaranth flower to a mixing bowl and this is found in a lot of Indian grocery stores. If you do not see it then ask your store manager or look for it on Amazon and make sure it is not a 3 party seller. The 3rd party sellers think they are slick and try to rip you off and I had a few experiances with them which where quite bad and I complained.
After adding the amaranth flour to a bowl then I add 1 pinch of baking powder to make it kind of light and airy. I from there will add either 1 pinch of ajwan or I will grind in a mortar and pestle either 1 pinch of cumin, fenugreek seeds, kaloonji, mustard seeds, coriander seeds, or black peppercorns or I would add just either 1 pinch of paprika, red chili powder or even turmeric. Add 1 pinch of either kosher salt, pink salt or sea salt. To this I add 1/4 cup of water until a firm dough is made. Add 1/4 cup of either corn, canola or vegetable oil on high heat and add 1 drop of either mustard oil, almond oil or coconut oil to this on high heat and take the dough and break it off where it is like marble size and shape it in to a log with your hands and you may want to oil your hands to keep the dough from sticking before you start.
Now fold the the logs of dough until the two edges are touching and pinch to make a ring and then fry in a hot skillet with oil or a wok until they are golden and crispy. This is perfect for afternoon tea along with other snacks. By the way UK Pakistan has better tea time then you guys, lol and ok of course I am being cheeky but harmless enjoy these snacks. Oh if you can’t find amaranth flour then whole wheat flour is ok too and no I do not mean maida which means bleached flour in Urdu. The whole wheat flour is fine or millet flour too is another option. Let me know how this all works.
