Turkish Red Lentil Kofta

Hello I am going to present to you my version of this yummy red lentil kofta. Take 1 cup of masoor ki dal which means red lentils in Urdu language. This gets rinsed and then soaked overnight in the refridgerator in a covered container. Next day make Pepper Paste. In a pot add 1/4 either 1 oz of sunflower oil, olive oil or grapeseed oil. Add 1 onion or shallot and 3 cloves of garlic minced on high heat. Cook until soft but not brown. Add the pepper paste, 1 pinch of paprika, 1 bullion cube, 3 dashes of maggi or knorr aroma.

Add 1/2 cup of water to the onion mixture and drain the lentils and add it to this pot and add 1/4 more water turn heat to low and let cook for 20 minutes. Add 1 pinch of each of parsley and dill, 1 tsp of tomato paste and 1 1/2 cup of bulgar and let it cook until it gets real thick and this looks like a blob. Actually it is like a dough. Let this cool and on a platter take a piece of parchment paper and then with put some cooking oil on your hands and using a teaspoon by forming these in to a kofta and placing this on parchment paper sprayed with cooking spray. You can use a sheat of aluminum foil or wax paper too if you wish. Keep going until you run out of lentil and bulgar mixture. Enjoy with a salad and ayran.

The list goes on etc. and of course I love latamore and luther vandros, the beatles, rolling stones and Yusef Islam is also one of the greatest voices and Allah blessed them all with such great talents.
