Homemade Burger Buns

Here are my yummy homeade burger buns. They are perfect to go with any burger. I know I had made a post of my red bean burgers yesterday with these buns on top of it and I did not want to leave you hanging and not post my homemade buns recipe. It starts like this, You will need 1 cup each of whole wheat flour and all purpose unbleached flower in a sifter. Add 1 handful of powdered milk, either 3 big pinches of yeast if using from a bag or a jar, 1 pinch of baking powder then sift and add 1 pinch each of plain sea salt, kosher salt or pink salt, turbidano sugar. I would suggest if you get 1 sachet of yeast if you can’t find any bags or jars of rapid rise yeast. Add 1 pinch of xantan gum.
Add 1/4 cup of plain seltzer water aka club soda or plain water at room temperature until you have a dough that is formed. Add 3 tbs of either butter ghee or 1oz of either flax seed oil, almond oil, hazel nut oil, walnut oil, hemp oil, olive oil, canola oil, sunflower oil, safflower oil, vegetable oil or corn oil. Rub this all over the dough and knead for 3 minutes and cover and let sit in a warm place in your kitchen and let rise for 30 minutes. Punch the dough and repeat then again once more by taking the dough and dividing it in to at least 6 pieces and roll each piece in to a round ball and place them on a baking tray either lined with silpat or parchment paper. Garnish the top before baking with a pinch of either white or black sesame seeds or poppy seeds. Let sit in the oven for 5 minutes before turning it on to 400F or 200C for 20 minutes. Also for instant pot in an air fry basket line with parchment paper or place silpat at the bottom then turn on by selecting bake, 400F as the temp, 20 minutes for the time and select after placing the air fry lid.
If using the instant pot method you may have to do 1 to 2 batches more. Be sure to stick a toothpick in to the buns to see if they come out clean and not doughy. If it is doughy then cook 5 more minutes and you are done. This is used for making sandwiches of any burger and for making bun kabab too. Oh if you want you can mince 1 onion or shalot and fry until brown and mix it with the dough before shaping and baking and this goes for garlic too if you wish. For this you will need to fry 2 cloves of minced garlic in oil before adding.
