Guinoes En Escabche (Pickled Green Bananas)

Hi folks, when I first seen this recipe I was in youtube looking for something to try and it was this lovely lady who named Ida and her channel is Sweets and Beyond. I went there to learn how to make pasteles and this was a long time ago. So I stumbled on this video and I pinned it to my Pinterest and I did try it with my modfications because it is only Mr, Riaz and me that eats. So I wanted to give this a try and a try I did. I snaped this picture and posted to my facebook page and got positive revues and now I am going to write on how I did this.
First of all I got 2 green bananas which I promptly cut in half and filled the pot up with water.The waterline should be covering the green bananas. I set it on the stove and started to boil it on high heat and added 4 tbs of olive oil and the two green bananas that I cut in half and let it remain unpeeled until I cooked them. I covered the pot and lowered the heat to low and let it cook for 25 minutes. Turn off the heat and drain in a colander and let cool. The peels should come off easily.
Cut them in big chunks like you see in the featured image you see above and now in a small pot it is time to make the pickling part. Before you do place the cooked green banana pieces in a bowl. Add 1 pinch of any color peppercorns whatever if they are white, black, green, pink or mixed to be ground in to a coarse powder and add to the pot. Add 1/4 cup of olive oil, 4 cloves of garlic minced, 1 bay leaf. 10 to 15 stuffed green Spanish olives and a little of their brine 3 dashes of either goya seasonador or adobo, 3 pinches of kosher salt, 1 bay leaf 4 capfuls of either wine vinegar, cane vinegar, white vinegar or apple cider vinegar, 1 onion or shallot on high heat and let the mixture get hot and you start smell.ing the garlic and onion or shallot cooking then turn the heat off and add this to the cooked green bananas in a bowl. Make sure the cooked green bananas are swimming in this oily mixture and this should be enough for the 2 green bananas I used but however if you have a larger family and have guests then you may want to double this recipe. I hope you will enjoy this.
