I tried this recipe a long time ago and however this is how mine turned out as you can see above. In a wok or cast iron skillet add 1 tsp of either coconut oil, canola oil, corn oil, vegetable oil or peanut oil. Add 1 pinch each of mash ki dal, black urad ki dal, toor dal, chana ki dal, moong ki dal, black and white sesame seeds, 2 curry leaves, 1 round red chili or kashmiri chili. This is the only time I will roast a masala before grinding is when I make a podi. Obviously it makes me sneeze lol. Grind in a mortar and pestle while it is still hot then add 1 pinch each of hing, turmeric and either add pink salt kosher salt or plain sea salt and mix some more.

The curry leaves should be crispy and the rest of the stuff should be slightly brown before grinding in a mortar and pestle. The finished podi is great for idlis and dosas.

The list goes on etc. and of course I love latamore and luther vandros, the beatles, rolling stones and Yusef Islam is also one of the greatest voices and Allah blessed them all with such great talents.
