Oatmeal Cookies

Ok with this recipe you will definatly need a large cookie sheet if you are baking in the oven or your air fryer basket for instant pot duo crisp. If you have other models of instant pot then you can buy the air fryer lid and the air fryer basket comes with it from what I seen. Also this can be done in an air fryer itself if you have one of these or in those small toaster ovens they had way back when and I think they still have them too. Also when I made these cookies which I got a request from my youngest daughter to make these. She lived with her paternal granny at that time and really wanted some cookies. They can either be made like this what you see in the image you see above or in bar form where you nead to smear the cookie dough out all over the place before baking. I do not want to get ahead of myself here and confuse everyone and now I am going to walk you through this.
First you will need a stick of butter in nearly room temp so it can soften. Mash this up and add 1 drop of alcohol free vanilla essence which can be found at any Indian and Pakistani grocery store. Add either 1 pinch of pink salt kosher salt or plain sea salt and 1/4 cup of coconut sugar and mix it with the butter until it becomes creamy. Grind 1 small broken piece of cinnamon stick in mortar and pestle then add to the buttery mixture. Grate a little nutmeg. Add 1 pinch of baking soda, 1 cup of oatmeal, 1/4 cup of all purpose unbleached flour and mix with a large wooden spoon and add 1 egg and mix some more. From here You can either leave as it is or add in either 1 handful of raisins, pistachios, walnuts, peanuts, cashews, almonds, pecans or even macadamia nuts. The nuts get chopped in a mini processor and this gets mixed in to the cookie dough.
For regular ovens or toaster ovens preheat to 400F or 200C Take the cookie sheet that will fit in to either one of these and place either parchment paper or silpat on there and arrange the cookies by breaking off pieces of dough a little bigger then marble size and roll it in to a mini ball then flatten it a little using the palm of your hands until it becomes a round shape. Place it on either parchment paper or silpat in to the oven for 10 minutes then remove when it is done then let them cool. For instant pot and air fryer methods, place either silpat or parchment paper inside the air fryer basket for instant pot and for air fryer. Arrange the cookies like at 4 at a time and place the air fryer lid for instant pot and select bake at 400F for 10 minutes and start same for air fryer.
When cooled remove from baking trays and repeat until there is no more cookie dough left. This is perfect for tea time and it goes great with tea, coffee, hot cooca or even a steaming mug of coffee for whenever you have a craving for this mid afternoon snack.
