Dahi Wali Bhindi

Hello everyone, this is another picture I found in my archives and there is one I seen in my Snapfish app I have seen but I can’t seem to download it. I have even posted pics in Onedrive, even in Zorpia before I got rid of it. I got rid of it because of all of the creeps that would gather there. Obviosly this was a real long time ago. Mostly I use Facebook but my social media was called Hi5 and even Myspace at that time too but they are gone also. I even uploaded in to Google spaces before Google did away with this and they are doing something different these days.
Now there are a lot of recipes for dahi wali bhindi which means okra in a creamy yogurt sauce and some put tomato, cashews and red chili powder in theirs and mine however doesn’t have any of this at all. It is because I do not want a red curry and my recipe goes like this. Mind you I am going at the top of my head with this one and I hope it is easy for you to follow. In a pot you can add 1oz of either coconut oil, vegetable oil, canola oil or corn oil. Add to this 1 drop of mustard oil, 2 curry leaves, 1 pinch each of hing and whole masala such as 1 pinch each of fenugreek seeds, cumin seeds, kalounji, mustard seeds and let them sputter. Add 1 small onion or shallot, 2 cloves of garlic, 1 small piece of ginger peeled washed and minced in to tiny pieces. Here you do not allow the onion to brown but let it soften and add 1 green chili minced then add 1 bag of frozen and 1 to 2 lbs of fesh okra cut in big pieces.
Cook this on low heat for 15 minutes and then shut the heat off. In a bowl add 3 tsps of besan and then add 1/4 water to make a slurry adding a little at a time to make sure there are no lumps then you add to this 1/4 cup of plain desi yogurt and mix well then add to the cooked okra in the pot. Turn heat back on to medium high and be careful this mixture will get thick fast. Add another 1/2 cup of water at a time and being careful that it is not too thin either. It has to be as thick as the curry from my pakora curry recipe if you remember. Enjoy this with either roti or with rice.
