Actually I just posted one very similar just a few seconds ago and normally I do not roast any type of spices but there are exceptions to the rule here. These types of dishes not only they are tasty they are healthy too as well. You will need these two following links before we get started here they are Quick Injera and Niter Kibbeh. The later is the spicy butter that makes it taste awesome. Tear at least 1 or two injeras in to bite sized pieces and place it in a cereal bowl. Add 2 pinches of flax seeds in a wok or cast iron skillet on high heat and toast them then add them to mortar and pestle. Add this to the bowl with the torn injera. Next stir and add 1 pinch of either pink salt, plain sea salt, kosher salt or bullion powder. Mix and add all of the spicy butter and mix again and place this on a piece of whole injera to consume.
There is another fit fit too which is using left over injera and add it to your leftover stew the next day. When I said any type of stew this is what I ment. You can even consume it with Ethiopian coffee which I recently found in the store near me carrying all sorts of things that I write about on this very blog.
