Different Lo Mein dishes

Actually I just removed 1 small freezer bag of chicken breasts from the freezer and placed it in the refridgerator for tomarrow’s dinner Inshallah. This is is the same type of lo mein that is in this post. I have a package of lo mein noodles in the house and I am intending on using them. After the chicken breast is thawed I am going to cut it in to tiny bite sized pieces. It is 1 lb or 1 kg of not just only chicken breast you can use. Which is also Feasable if you use the same amount of beef, veal, goat and lamb. Even 1 bag of shrimp that is raw and uncooked can be used. Just remove the veins and the shells and you are in business.
I say boneless chicken breast is ideal comparing to chicken on the bone and you do not have to worry about bones being in your food. If dealing with lamb and goat and please be careful with a boning knife because they are razor sharp. Cafefuly remove the meat from the bone to use in these lo mein dishes. For the rest of the items like cutting other pieces of meat not on a bone change to a meat cleaver or a santokou knife. I did not spend over 100 bucks US for a knife and the one I have I think cost me a mere fraction of that. I think I spent about between 15 to 25 bucks US for mine and it works just great and I got my knife set piece by piece with the covers too so clumsy me doesn’t cut myself.
The others and the knife guards I bought on Amazon. I am going to write a post of this one day Inshallah. If you are cutting beef then I suggest either beef stew pieces or even steak in to bite sized pieces as well. Set these to the side then go and boil 1 gallon or 4 liters of water. Add 1 pinch of salt and add just a drop of peanut, corn, canola or vegetable oil in the water and cover to let it come to a rapid boil. This is done on high heat and in a stockpot or large coldero which is big enough to let the noodles cook without breaking. Add 1 package of lo mein noodles to this water and let it cook according to package directions which give or take should be between 10 and 15 minutes then drain, place back in the pot and set aside. You are done with this for now.
Oops I forgot any type of fish fillet only you can also cut in to bite size pieces and set to the side as well. It is the same weight as the others minus the bag of shrimp which you have to use the whole bag. Even squid and occtopus cleaned can be used in this manner too but stay tuned for instructions so you can cook them so they do not become tough and be a rubber band consistancy because these can be tricky.
First you take 5 cloves of garlic and 1 small knob of ginger and mince and set aside on the cutting board. In a wok on high heat add 1 oz of the type of oil I have mentioned and yes you have a choice as usual and add 1 drop of either sesame or almond oil then you can add the ginger and garlic. Cut 5 green onions in to small pices by cutting it in half once and again once more and start chopping it and add to the hot oil on the stove with garlic and ginger. From here season this with 3 dashes of either soy sauce, tamari or panzu. This is not a fried rice or fried noodle dish so I am not adding dark soy sauce and it is not required in this recipe. Add 1 pinch each of red chili powder, turbidano sugar, msg, 3 dashes of maggi or knorr aroma. Stir and add either 1/4 cup of frozen mixed vegetables or 3 carrots juilliened, 6 mini sweet peppers or 1 bell pepper of every color which is red. green, orange and yellow diced. Cut in half then remove seeds cut in to strips and finish dicing from there by cutting the the short part of the strips and 1 handful of steamed broccoli cut in to tiny pieces. Also you can add some pea pods, cabbage or bok choy too. Stir fry until the raw vegetables are slightly crunchy. If you add steamed broccoli or even cauliflower to get rid of it then cook for 2 minutes. Add this to the pot with the noodles and then repeat the process only adding your protien of choice
If using either octopus or squid then I suggest after you clean it by ripping off the tentacles and taking the beaks out and squid has the plastic like backbone in it. remove these and chop them in to pieces and adding more oil like you did when you stir fried the vegetables. The residue from everything has used has everything in it so no need to wash the wok in between. Fry these for 2 minutes and then add to the pot with veg and noodles, The shrimp needs to be cooked until it turns pink, the pieces of fish are cooked until opaque and starting to flake, The chicken breasts takes at least 10 minutes when you stir fry and the red meat takes at leas about 15 minutes then it is completley done or cook until tender. You may want to use 1 small piece of green papaya made in to a paste in a mini food processor or 2 pinches of meat tenderize by Shan for the beef, lamb, goat or veal. When done add to the noodles too if using and then shut the heat off and in a small bowl add 1 tsp of cornstarch and 1 cup of water a little at a time to make a slurry. Turn heat back on to high and cook until this becomes a thick gravy. This also deglazes the wok and add 1 pinch of pink salt. Pour this all over your noodles protien and vegetables of choice. Mix and and let 5 minutes for the flavors to mingle and enjoy with oolong tea. P.S. oops also vegans and vegetarians you can enjoy this meatless too just add veggies and that’s it.
