Wonton Wrappers

This is my manual pasta maker.

Oh my God I accidently deleted my rough draft from Icloud notes by mistake thinking I had already published this recipe. Here we go breathe I can do this I am telling myself. Ok here it goes and it is just like making homemade pasta sheets. To get through this faster we can use this to make like pasta sheets after making the dough consisting of 1/2 cup each of all purpose unbleached flour and whole wheat flour. Make a well in the center and add 1 egg and a pinch of pink salt. Add 1/4 cup of very cold water a little a time and knead it in to a dough. Keep kneading until there is no more flour left in the bowl and it is a big huge round piece of dough. Add 5 tsps of either corn canola or vegratable oil and 1 drop of sesame oil and knead some more until it becomes elastic and stretchy.

Cover and place the dough in the refridgerator for at least 3 hours and then you can take some all purpose unbleached flour like 1 handful and scatter some on a tray. I have my big tray on the table where I have this pasta maker screwed in at by the edge of the table. The handle you see in the picture above inserts and it turns. Take a piece of dough no bitter then a golf ball by breaking the dough apart and making the golfball sized pieces. Dredge each one in to the all purpose unbleached flour and either you can use this pasta maker starting at 10 and turning the crank until and repeating until this sheet is paper thin. Or you can use a rolling pen and keep rolling out the dough and then cutting it in to squares. It is like if you are making ravioli but the squares have to be twice that size.

Roll to the point where it is almost as big as a pancake sort of and dust it with cornstarch to make sure they do not stick to each other. 2 pinches per wonton wrapper is enough and spread it out then place in a zip baggy for later or for use making my favorite crab rangoon, and this recipe will be coming up soon. It is also used for fried wonton and wonton soup along with potstickers and of course dimsum. Please look for these posts as well. Oh if using the pasta machine then be sure to cut each sheet in to at least 3 squares
