Okra Soup

Hey lovelies I just can’t believe how many old pictures I stumbled on. I know you aer curious about my orka soup with amala. Amala Made In The Microwave This is the recipe right here and also before you get started that it is best that you take out a mini processor and rough chop 1 red bell pepper, either 1 habenero or scotch bonnet deseeded, 2 cloves of garlic and 1 onion or shallot and make the stew base and add 3 tbs of red palm oil to a standard size coldero and make the stew base. You also have to precook your protien of choice and mine was smoked turkey in which are at least 3 pieces in an instant pot on pressure cook setting for 10 minutes. You can use chicken also and it is also for this amount of time and it is 1 kg or 1 lb of meat of choice.
For beef, lamb, veal, or goat it is 20 minutes to pressure cook and tripe you need to clean this in a large bowl of water with 1 drop of dish soap added and this is while it is still uncut and the fat gets removed from the smooth side first and then wash until the water is clear and this takes at least being rinsed 10 or 11 times then again fill up the bowl and add 1 handful of kosher salt to the tripe and wash again so it does not taste salty after you cook it by repeating the rinsing process and then add 1 to 2 capfuls of white vinegar and this finishes the funk on the tripe and repeat the rinsing once more and then it is ready to be cut and cooked in a pressure cooker or shall I say instant pot for 30 minutes. After adding your protien of choice then you can add 1/2 gallon or 2 liters of water to cook.
Add 1 bullion cube and 3 dashes of maggi or knorr aroma then close the instant pot, set on sealing, and the time it takes to cook. For tripe it takes a repeat of 30 minutes to cook after you check it the first time, chicken and smoked turkey is done at 10 minutes while beef, veal, lamb and goat takes 20 minutes.
For me I like 6 stockfish pieces and 1 piece of dried smoked fish in my okra soup but Mr. Riaz hates it and he even thinks my smoked salmon stinks. I would soak these overnight in the fridge in cold water covering the dried fish and stockfish and use it the next day. After dumping the pepper stew base in to the pot with the red palm oil then I would add 1 pinch of dawadawa, 2 pinches of crayfish and 3 smoked dried shrimps crumbled. I will then put a bag of frozen okra or even 1 lb or 1kg of fresh okra in the food processor to chop it up good so it can draw and add this to the stew base in the pot on stovetop. When meat is done in the instant pot then I uses the stock and the meat to add to the okra and stew base mixture. I had put the bullion cube in there so I do not want to make this okra soup too salty, I turned the heat down to medium high and cooked it for an additional 10 minutes.
After this the soup should draw oh I put a tiny pinch of pitter stone that I bought at an African store. This is lovely with either amala as you see here eba, semolina fufu, pounded yam or even with cocoyam fufu too.
