Ridge Gourd Curry

Howdy folks, I hsve this other ridge gourd recipe for you and I am going to tell you how it is done and it is about time too because you folks has been waiting for such a very long time actually with baited breath on how I made this. First do the prep like peeling and chopping 2 ridge gourds also called Chinese okra, 3 cloves of garlic, 1 onion or shallot, 1 tomato, 1 small piece of ginger and 1 green chili. Make Garam Masala also just before starting this dish to make your cooking effortlessly simple because it is a simple dish. Also turn heat on to high and this is for stovetop only.
Add 1/4 cup of either corn or peanut oil then 2 tbs of either coconut oil or butter ghee. Let that melt and add 1 pinch each mash ki dal and black urad ki dal and roast them until it turns brown, 1 pinch each of hing pink salt, whole mustard and cumin seeds to splutter then add 1 pinch each of turmeric, red chili powder, the contents of the mortar and pestle, 3 curry leaves, and 1 pinch of coriander seeds also ground in mortar and pestle. Stir and add the onions or shallot to cook until they turn brown. Add the garlic, green chilii and ginger to cook until the raw smell goes away then add the tomato and reduce heat to soften the tomato so it can be turned in to mush. You may have to cover at this point to speed up the process. After you get a curry base then it is time to add your ridge gourd and cover again to cook for 15 minutes while still on low heat. If the ridge gourd is not done at this point then go ahead and let it cook for another 15 minutes and keep repeating until soft.
When done it is eaten over rice or naan and I suggest you will try it with some of my homemade achar on the side too. This dish too is amazing and yess you can have lassi too as well.
