Veggie Shami Kabab

Actually I have done a non veg shami kabab recipe before for this blog and this is the sister for that post. I found this in facebook among my other photos of things I had posted and had’t written about them yet. Take 1 cup of chana ki dal which are the big yellow lentils and soak then overnight in the refridgertor in a covered container. Drain the water and add this to the big food processor with 1 green chil chopped, 1 dried round red chili or long dried red chili, 1 pinch of pink salt, 1 onion or shallot rough chopped, 1 clove of garlic chopped, 1 small piece of ginger chopped.
In mortar and pestle add 1 clove, 1 pinch each of black peppercorns, cumin, black cumin, shai zeera, coriander seeds, cilantro, turmeric powder, mint, 2 kabab chini 1 small piece of cinnamon 1 strand of mace, greated nutmeg, red chili powder, paprika. Grind this in to a coarse powder and add to the dal mixture in the food processor and pulse until you do not see no more chana ki dal and remove this to a mixing bowl making sure everything is out of there. Scrape with a rubber spatula as you go, add 1/2 cup of besan as a binder.
Add 1 capful of either lemon or lime juice or add 1 pinch of citric acid. Mix and add 1/4 cup of water a little at a time and make sure it is a soft dough consistancy. You should be able to shape it in to patties with your hands and drop it in hot oil to fry. You do not want a watery batter so be careful. In a hot wok or cast iron skillet on high heat add 1/4 cup of either corn, canola or vegetable oil for frying. Let oil get hot and take the dal mixture by the teaspoonfuls and with damp hands shape in to a patty and carefully add it to the hot oil to fry. It should be at least 3 per batch and le brown underneath and flip and do the same. Using a metal spatula is what is neaded for this task and a skimmer which I use after the kabab is done by placing it on paper towel lined plates. Repeat until there is no more dal mixture left and you have these yummy kababs that vegetarians and vegans will love. Great to have with lassi and enjoy.
