The Soul Food Version Of Oxtail Stew

Sorry about this old image of this soul food version of oxtail stew which is also very yummy and has grown to be a fast favorite of mine. I was in my early 20s and a bad time in my life on which I am like a phoenix rising from the ashes of my life. I have to and still my life goes on until Allah calls me. This is an easy no fuss recipe that I would do on pressure cook setting in my instant pot or it can be slow cooked too all by the same cooker so let me show you how.
You will need 1 lb or 1 kg of oxtails that is washed off. This removes the leftover blood that is on the meat and place this in an instant pot. Add to this either 1 bullion cube crumbled or 3 dashes of seasoned salt, 3 dashes of maggi or knorr aroma, 1 pinch of peppercorns ground and added to the meat, 3 pinches of shan meat tenderizer, 1 onion or shallot, 3 cloves of garlic, 1 bay leaf 1 pinch each of thyme, red chili powder or 2 shakes of Carolina reaper powder otherwise called Carolina reaper dust. Also you can add 1 drop of hot sauce in its place. 1 cup of frozen mixed vegetables, 1 capful of cane vinegar, either add 1 can of tomatoes with 3 cups of water or add 6 cups of water and 1 can of tomato paste. Stir and add 3 dashes of mrs dash.
For slow cook method on instant pot, place 1 sheet of aluminum foil over the top and place the glass top over the lid. this provides a nice seal and you do not have to run and empty the condensaton collector in the back of the cooker. Once I had to do it several times or end up with a wet counter if I didn’t. Tap slow cook for 4 hours or 430 meaning 4 1/2 hours and select start. For pressure cook if you are in a hurry then place the pressure cook lid on top and you will hear a jingle as it goes in to position. Make sure it is set to sealing and tap pressure cook for 20 minutes then place steam diverter and tap quick release button. After pressure is gone then you can repeat if the oxtails are not done for another 20 minutes and gain repeat the thing with the steam diverter at the end and it is ready to be consumed and it is a must with cornbread.
