Baked Chicken My Way

Actually I have seen this old picture also with the others and I already have a baked chicken post here on this blog if you remember my simple baked chicken recipe but this one is more for me while the one I just mentioned was for my youngest daughter. Me I love more spice and everything in my food and this is so yummy it is hard to pass it up really.Preheat the oven to 350F or 190C. Sorry this is for regular oven only and I used 1 whole chicken.
In a mortar and peslte Add 1 pinch of peppercorns, sage, celery seed and a 1 bullion cube if using and grind. If you are not using bullion then add 2 pinches of either vegtea seasoning, pink salt or sea salt. The infused types are ok too if you want to use for this also or add 3 shakes of seasoned salt or goya seasonador. Add either 3 drops each of worcestershire sauce, maggi or knorr aroma, liquid smoke. Add 1 drop of hot sauce providing the infused sea salt doesn’t have any chili or smoke flavoring infused in it. Add 1 pinch each of rosemary, parsley, chervil, dill weed, thyme, tarragon, lovage and savory. Rub all of these inside and outside the chicken. Also add 3 dashes of either balsamic vinegar, malt vinegar, tarragon infused vinegar, white vinegar or apple cider vinegar. Crush 3 cloves of garlic and massage the inside and outside of the chicken once more.
You also can add 3 dashes of lemon pepper and mrs dash seasoning too is an amazing spice blend too. Now spray the roasting pan with cooking spray and place it in the oven to cook for 1 hour. You can do this at 1/2 hour intervals until the chicken is completely cooked. One day my dad came and it was veteren’s day and I put carrots, celery, 1 onion or shallot, and 2 potatoes quarterd. He really enjoyed it and that is all he can tell Mr. Riaz that I make great food.
