Green Lentil and Spinach Veggie Burger

Here you will need 1 cup of green lentils only. Wash and rinse them 3 times and then put in the instant pot with 1 quart of water unseasoned for 10 minutes on the pressure cook setting with it on sealing. Place steam diverter and press the quick release button. Remove the lentils from the instant pot by using a ladle and a strainer to make sure the lentil is still fully intact. Ok if not then oh well then this is ok too. Place these strained lentils in a bowl and add 3 cloves of garlic smashed and peeled to remove the skin and add either 1 onion or shallot or 2 green onions all rough chopped and blitzed in a mini processor. Add 1/2 bag of frozen spinach. and mix.
You can add 1/4 cup of either gluten by Bobs red mill or the same amount of either rice flour or for those that have celaic disease can use besan which is chickpea flour for a binding. Add 1 capful of brags liquid aminos. bullion cube or use 2 pinches of bullion powder, seasoned salt, adobo, goya seasonador, vegtea seasoning sea salt or kosher salt. Add 1 pinch each of cumin seeds and peppercorns to mortar and pestle grind and add it to the lentil mixture. Add optional 3 drops of liquid smoke. Add 3 drops of maggi or knorr aroma, 2 pinches each of nutritional yeast and xantan gum, 3 dashes of worcestrshire sauce. Add 1 chili of any type if not using hot sauce or any of the chili infused sea salt. Add 1 pinch of thyme and chives. Mix and set aside covered in the fridge for 30 minutes.
In a cast iron skillet turned on to high heat and let get hot then add 1/4 cup of avocado oil or safflower oil and let this get hot in to the skillet and with damp hands form in to a ball by grabbing 1 golfball sized pieces of the lentil mixture and form in to a ball then flatten in to a patty carfully and add to the hot oil with the skillet turned down to medium heat then place 3 to 4 patties in to the hot oil and let cook for 3 minutes per side and flip and repeat until done. Repeat until there are no more lentil spinach mixture left and enjoy this with a mug of hot hearb tea of your choosing.
