Celery Fritters

Ok time to get out the big food processor again for this one. The last post kind of triggered me put me in a bad mood because of a certain way someone who was in my life before that is no more, her evil spirit just triggered me and I mean big time. When you are an abuse survivor this mess stays with you. Only the ones that hasn’t gone through this doesn’t understand and does not want to know even if you tell them and being with someone who doen’t understand it will never know where an abuse survivor is coming from. Ok enough of this said, this post is making me very happy though since the elephant in the room once again has been dealt with. Now take a mixing bowl and add in there 1 half cup of either besan or any other type of flours made from other types dal, and 1/2 cup of rice flour, 1 pinch each of hing baking powder and pink salt.
Now take 4 stalks of celery, 1 onion or shallot, 2 cloves of garlic and give a rough chop and add to the food processor, Add 2 curry leaves, 1 pinch of cilantro , 1 green chili. Close the food processor lid and pulse it until everything is ground up. Add this to the bowl with the dry ingredients and add 1 dollop of plain desi yogurt, 1 pinch each of mustard seeds fenugreek seeds, kalounji and cumin seeds. Leave them whole. Mix with a wooden spoon and add 1/4 cup of water a little at a time to make a lump free batter. You may want to add 1/4 more in case it got too thick but you do not want it too thin either.
Take out the cast iron skillet and add 1/4 cup of either corn, canola, vegetable or peanut oil to fry and add 1 tbs of either mustard or coconut oil to this oil in the skillet on high heat. Let the oil get hot and add the batter by the teaspoonfuls. It is like you are making pakora but this is not really pakora. Add in there wich should be 3 fritters at a time and let them cook until they are golden on one side and dry on the top. It is like if you are making pancakes nearly. Flip and cook on the other side and make sure they are done on the inside too as well. There is another way of making these celery fritters and it involves 1/2 cup each of all purpose unbleached flour and whole wheat flour as a substitute for rice flour and the dal flours or besan. When the celery fritters are ready place on a plate lined with paper towel and repeat until there is no more batter left. Enjoy with chutney of choice at tea time and with lassi.
