Duck Giblets With Grains And Apples

Happy Thanksgiving!!!!!!!! I actually wanted to so something different other then a turkey and Mr. Riaz asked what did I want and really I had my heart set on a rabbit because I love to eat rabbit and my other choices were Cornish hen or duck too so he brought a duck. It was frozen and I cooked it today and the giblets and the neck I put inside my instant pot with 3 cups of water and the duck I will talk about this in the very next post Inshallah.
I had 2 apples and I split it in half to add to the instant pot and the other I used for something else that I would disclose also in next post. Add 1 handful of raisins and a few nuts of choice I added almonds or you can add chestnuts. In mortar and pestle add 2 juniper berries, 1 small piece of broken cinnamon stick, 1 strand of mace, a little greated nutmeg, 4 allspice berries, 1 pinch each of celery seeds and peppercorns to grind and add to the giblets, rough chop 1 onion or shallot, 3 cloves of garlic, 1 pinch each of chervil, tarragon, thyme, lovage, savory, dill, marjoram, rosemary, sage, lemon pepper. Stir and add either 1 bullion cube or 1 pinch of bullion powder, vegtea seasoning, seasoned salt, kosher salt, sea salt or pink salt. Add 3 dashes each of balsamic vinegar, worcestersbire sauce, mrs dash, either maggi or knorr aroma, 1 drop of hot sauce, stir and select pressure cook for 20 minutes and place a steam diverter on the cooker and do a natrual release.
Don’t forget to place the cooker on sealing postition before you start your cooker. Add 1 cup of grain of choice which I chose rye kernals because I think it goes great with duck but you can add whichever you have on hand. Add 1 more cup of water and once again set to pressure cook for 20 minutes with the cooker set to sealing and again either do natrual release or tap quick release and please do not forget steam diverter. If there is too much liquid then you can turn on the cooker to sautè for 15 minutes and leave uncovered and stir occationally until it is semi dry. This is a great side dish for the duck that I made and the kitchen smells great and nice and aromatic enjoy also with cranberry jelly.
