Goat With Chinese Noodles And Pea Pods

Hey folks this is a very simple dish and I am going to walk you through it but first you will need to chop 3 green oinions, 4 cloves of garlic, 3 Thai chilies, 1 small piece of ginger and please wash them first before adding to a hot wok on high heat with 1/4 cup of corn, or canola oil added. Add 2 drops of sesame oil and fry until everything is fragrant and add 1 kg or 1 lb of goat that has been washed. Fill up a large bowl and add 1 capful of white vinegar and drain and rinse about 4 or 5 times and place in colander and shake until the water has drained out. Make sure the water is clear before adding the meat to the wok with the green onion mixture. Add 1 pinch each of pink salt, turmeric powder, msg, red chili powder, 1 pinch of white peppercorns ground in mortar and pestle and added to the meat and stir. Add 4 shakes of either soy sauce, dark soy sauce or panzu, 3 dashes each of maggi or knorr aroma and Chinese black vinegar. Reduce heat cover and let cook for 25 minutes on low heat. You may repeat if the meat is a little tough and also you can add 1 piece of green papaya and grind it in mini processor to make a paste or 3 pinches of Shan meat tenderizer.
Here you can add also 1 dab of oyster sauce, Rinse and add 1 lb or 1kg of peapods and now raise the wok back to high heat and stir fry to let cook until slightly crunchy then turn off the heat. Now before this gets underway and sorry I have done this backwards for which I appologize that you bring 4 liters or 1 gallon of water and cover the pot and turn heat to high. Add 1 pinch of pink salt and either corn or canola oil and bring to rapid boil. Add the noodles and it is any type of Chinese noodles. Or you can use even soba or udon noodles too which are Japanese but they are ok as well and cook them according to package directions. When done rinse and drain and put it back in the pot and add the contents of the wok to the noodles. Serve either with kawa, matcha green tea or even oolong tea.
