Meeti Chawel Sugar Free

Ok this is a sweet dish that is very popular when there is a special occation like if either someone gets married, has babies, on Eid or even Shabrat which is just before Ramadan at the end of Shaban. These are the months in the Islamic lunar calender. Also it is delicous and this while being sugar free at the same time is not diabetic friendly because of the high carb content. So fellow diabietcs it is ok to eat if your sugar levels are 80 and under for breakfast even. Do not consume at all if your sugar levels are 110 and above.
In a coldero on high heat add 3 pats of butter or 1 tbs of butter ghee to 4 tbs of canloa, corn or vegetable oil. Add 3 green cardamoms to a mortar and pestle and smash and empty contents in to the oil butter mixture. Stir and add 1 to 2 slivers of orange rind, 1 drop each of rose essence and keera essence, 1 pinch of yellow food color, 15 peanuts, cashews, pistachios or even almonds. Roast this in the spicy oily mix and add 1/4 cup of either monk fruit sweetener, agave nectar or sugar free syrup by Zayed brothers. You can buy everything from any indian or Pakistani grocery store but the sugar free syurp is at many Middle eastern grocery stores and the monk fruit sweetener you can buy from Amazon or ask your manager at your local grocery store to carry it. The yellow food culor is in a powder and it is approved and it is halal.
Next add 1 cup of basmati rice only and stir until it catches color and add 3 1/2 cups of water and bring this to a boil. Lower heat and cover to cook for 15 minutes. Occationally stir to make sure everything is combined and add 1 handful of raislns or you can also add 1 pinch of frozen grated coconut unsweetened or 5 dates chopped up too. Actually this goes in before you close the lid and let cook. When the timer beeps go and turn heat off and again on the stove and some like mine have a timer on it and you can also use the timer on the microwave too by setting the timer by selecting cooking timer and enter 20 minutes then select start for the rice to sit on the dum for 20 minutes. You can enjoy from here with either a cup of kawa or a cup of chai. Also if you are having this as a desert then have a salad with a protien of choice before you add this to a plate to consume.
