Chickpea Pilaf

Actually when I tried out this recipe that I intened on it being veg instead of non veg but ok I will write the non veg as an option and this is not to be mixed up with Peshawari mewa pulau. This is a Turkish dish I am doing this time and what you have to do is add 1/2 cup of chickpeas with or without meat unseasoned in an instant pot with 1/2 gallon or 2 liters of water. Add 1 lb or 1 kg of either lamb, beef, chicken, veal or goat only. Cook for 20 minutes on pressure cook setting and when you have these selected then select start.
Place steam diverter and opt for natural release. Just put the steam diverter on the vent and walk away and do other stuff like making the Pepper Paste, Add 1/4 cup of either sunflower, olive or grapeseed oil and add 1 onion or shallot diced, Caramelize it and add 3 cloves of garlic chopped. Add 3 pats of butter or 1 tbs of butter ghee, 1 bay leaf, 1 pinch each of thyme, mint, parsley, dill weed, 2 strands of saffron, 1 pinch each of cumin seeds and black peppercorns ground in mortar and pestle which also gets added to this pot and also it has to be on high heat on stovetop. Add 1 bullion cube, 3 dashes of maggi or knorr aroma, your pepper paste from the link. The instant pot should now be depressurized and should be safe enough to open. If there is some pressure remaining then press the quick release button.
First take the meat from the pot and fry it in the spicy mix and then take 1 tomato and pureé it in a mini processor and add this and 1 cup of washed rice. It can be either white or brown basmati rice which is my absolute favorite for this and add 10 almonds or pistachios crushed then add the chickpeas undrained because all of the meat stock is in there with the bean juice and bring to a boil and coveer and reduce to low and cover and simmer for 20 minutes or until the rice has absorbed the liquid. Keep checking snd stirring on intervals to make sure the rice is evenly cooked. When time is up be sure to set timer again for 20 minutes to let it sit on the dum before eating. This will make sure the rice is tasty and flavorful. Enjoy this with black tea, kawa, Turkish coffee or even ayran. By the way this is a yogurt drink also called leban in Arabic and lassi in Urdu. Ayran is Turkish name for this drink.
