Seitan

Ok if you want to know what this is and it is very easy to make. It is called seitan and it is very easy to make. It also uses very few ingredients. You will need 1 cup of Bob’s red mill vital wheat gluten. I used the last amount today so I have to get another bag or two Inshallah next time I go grocery shopping. Grind 1 vegan bullion only in a mortar and pestle or just use the powdered in the jar. Maggi, knorr, has immitation chicken and beef that is suitible for vegans and vegetarians. There is jumbo too and this is great as well and even maggi has a black mushroom bulion cube too as well. I have used this in earlier posts as well.

Add 1 to 2 tiny pinches in to the wheat gluten and add the rest that follows and add the rest of the bullion powder from the mortar and pestle oinly in to a regular coldero filled with cold water on the stove and set it to boil. this will make a stock for later. Don’t turn the heat on yet. Just set it aside until the dough is forned. If using bullion powder from a jar then add 3 pinches to the water and stir.

Add 3 dashes of either braggs liquid aminos or tamari, 3 pinches each of paprika and nutritional yeast. 1 dab each of gochujang which is Korean pepper paste and miso which is a fermented soy product and can be foud in Asian stores. Also you can add 2 tbs of sriracha in pleace of gochujang if you wish. Add 1/4 cup of water a little at a time and knead until it becomes a dough. Make sure you keep kneading for 5 minutes after the dough is made. Now break several pieces of dough and knead each one and form it in to a log. It should look like a sausage and go ahead and slice these with a knife. Make sure it is sharp because this is like cutting actual meat. Slice these in to rounds and then add them to the the stock forming on the stove and when they are all done make sure this is all submerged and the yeild of water is 1/2 gallon or 2 liters. The water should cover the seitan and then cook for 30 minutes.

For use in other cuisines depending on whatever you want to add like if you are going to use it for making of Indian or Pakistani cuisine then you will be directed to this post to make the basic seitan recipe plus a secondary spice mix which we will cover that later Inshallah. You can add 1 bay leaf, 1 clove of garlic crushed and 1shallot sliced in to tiny pieces which are optional. Turn heat on to low and simmer for 30 minutes. Let cool and place in a storage container and place it in the refridgerator for later and add the liquid too. do not ditch this iiquid at all because these will be used in other recipes as well.
