Whole Dried Peas With Meat

Actually it is extremely cold last night and I wanted something that is tasty and yet warm me up from the inside too as well. The thing is these dried whole peas takes a long time to cook and you will need a pressure cooker most definiately. My instant pot was amazing for making this dish and the smoked turkey leg I used to make this dish with fit nicely in the inner lining itself without an issue. I have an 8 qt which is perfect and I am still in love with it since day one.
You will need 1 cup of dried whole peas only. Also they are very cheap and you can find them anywhere where they sell dried beans. They also have a lot of fiber too as well and sort them out to see if there are any rocks in there or bad peas. If you see those then remove them and wash the peas well in cold water and drain each time about 3 or 4 times and add enough water to cover the peas and set aside and place this on a table or elsewhere on the counter within easy reach. Add 1 oz of either sunflower, safflower, corn, canola, peanut, vegetable, olive or grapeseed oil. Then add 1 tsp of either almond, coconut, hazelnut, walnut, hemp , coconut, macadamia nut, or butter ghee.
Slice either 1 onion or shallot in to half moon slices and turn instant pot on saute function for 5 minutes and select start and 3 cloves of garlic chopped. Season with either 1 pinch of pink salt, kosher salt, or sea salt, If using the infused type if adding smoked meat do not add either the smoke infused sea salt or 3 dashes of liquid smoke. Do not use the chili infused sea salt if using 1 chili of any type, 1 pinch of red chili powder and this also includes the Carolina reaper dust or 1 drop of hot sauce, 3 dashe of either adobo or Goya seasonador, seasoned salt, 2 pinches of either bullion powder or vegtea seasoning or 1 bullion cube is also a seasoning option.
Add 3 dashes of maggi or knorr aroma which also gets added after letting the onion or shallot turn brown and the garlic slightly toasty. Add 1 pinch of paprika, 1 bay leaf, mixed herbs consisting of 1 pinch each of lovage, savory, thyme, marjoram, parsley, tarragon, basil, oregano, rosemary or instead of mixed herbs then add mrs dash. The mrs dash is highly seasoned and I did not add the paprika or bay leaf when I added the mrs dash. Actually I will put it in with the next batch though. I was so hungry that I was in a mad dash to get dinner on and it was getting kind of late and I had my blood sugar to check and medicine to take. I have a set time and that is that. Crush and add 1 pinch of peppercorns in a mortar and pestle. Stir in between and add 1 kg or 1 lb of either besides smoked turkey you can add unsmoked turkey as well, goat, lamb, chicken, veal or beef.
I added the bullion powder, the chili of any type I used was a random dried chili and they can be fresh or frozen as well, maggi or knorr aroma, mrs dash after I used sunflower oil and walnut oil to the instant pot and added my onion and garlic. Then after I add my smoked turkey which I wanted for a protien of choice and then add the dried peas and 6 cups of water which is enough to over the peas and the meat. This is how I put this together and you can choose from the list of what you want to add and remember to add either mrs dash or the mixed herb option. Now it is time to cook by placing the pressure cook lid on the cooker and have it on sealing position. Select pressure cook for 20 minutes then start. Place steam diverter on the vent and press quick realease and check the peas. These takes a very long time to cook and with the stovetop pressure cooker when I ran it though a couple of times the peas was still hard so I recomend the instant pot most definately. Repeat the process again this time cook for 30 minutes after checking the liquid and you may want to add another cup of water or two before doing so. After the second time then the peas itself was perfect and the meat fell off the bone including the smoked turkey I used. Amazing when eaten alone this way or with a small slice of homemade whole grain bread with some plain yogurt on the side.
