Cheese Sauce

Hey folks sorry I forgot to say Happy New Year to all on the last post which was my ranch dressing recipe. It was my very first blog post of the new year of 2023. I’m sorry it slipped my mind. I was thinking of other things so Happy New Year 2023.
This is an easy post and you can add 1/4 cup cheese powder by either Auguson Farms or Hooshier Hill Farms and follow the directions on the can for mixing. I did 1/4 cup eyeballing it all of the way like I normally do. Add up to 1/4 cup of water just a little at a time until it becomes a thick slurry.
From here please kindly make sure it is lump free. Add your 1 pinch of herb of choice, mrs dash, 3 drops of liquid smoke, 1 pinch of either bullion powder, adobo seasoned salt, vegtea seasoning or even sea salt to make it savory or 1 or 2 pieces of any type of dried fruit or roasted nuts ground to make it more like a desert. Add a drop of either walnut, almond, hazelnut, olive, hemp seed, flaxseed or macadamia nut oils. Mix and stick in the microwave for 20 seconds.
Also you can make a bechamel sauce by doing this, by adding 1/4 cup of either olive oil or grapeseed oil to a small coldero on medium heat. Add 1 tsp of all purpose unbleached flour like you are making a rouix. Make sure it is blended in and free from lumps then add 2 handfuls of powdered milk preferably nido or carnation. Mix and add 1 cup of water little by little until it becomes a slurry. Turn off heat and crack an egg in to a bowl and whip and temper this with the milky mixture a little at a time while stirring. Add now tempered egg mixture to the pot and turn heat back on this time to medium low.
Stir again until it becomes thicker and shut heat off and here you can add one or two handfuls of any type of grated cheese. I prefer to grate my own on a knuckle shredder. By the way, take a chunk of cheese about an inch thick and grate coarsely. For softer cheese you can crumble it whle the harder one needs to be grated. Mix the cheese with the bechamel mixture on the stove while it is still hot and quickly mix. Make sure all of the grated cheese you added has melted. You might have to turn the heat back on low heat for 1 minute or less then turn it off again and make sure this is done before it cools off again. when smooth it is complete.
This also you can jazz it up the same way like you made using the cheese powder. Add this to either toast, chapati or paratha. Enjoy.
