There is another thing troublling me is a recent earthquake in Turkey. I have Turkish friends and I pray Inshallah everyone is ok. Now with this said I can write this recipe from a picture from an earlier post. There was one I seen on the net and the site isn’t there anymore so I had to improvise the rough draft on my icloud notes. I also use samsung notes on occation too but mostly my favorite is icloud notes because it covers all all of my devices.

Turn on high heat and in a wok or cast iron skillet add 1 pinch each of mash ki dal and chana ki dal and dry roast them and add this to mortar and pestle, 1 small broken piece of amchur, 1 pinch each of black peppercorns, coriander seeds which gets ground in a mortar and peslte along with the roasted dal and set aside. Again turn on either the wok or cast iron skillet back on to high heat and add 1/4 cup of either sunflower, corn, canola, vegetable or peanut oil.

Crackle 1 pinch each of kalounji, cumin seeds, shai zeera (caraway seeds), black cumin seeds, fenugreek seeds, mustard seeds. Add 3 curry leaves, 1 whole round red chili crumbled. Mince 1 onion or shallot and stir until brown. Add 3 cloves of garlic. 1 green chili, 1 small piece of ginger crushed. Stir and add the contents of the mortar and pestle, 1 small piece of turmeric root crushed in mortar and pestle which gets added to the spicy mix. Add 1 pinch each of red chili powder, pink salt, chop 1 tomato and reduce the heat to low and cook by stirring occationally until the tomato turns mushy. Add 1 bulb of either fennel or anise fronds and all. The fronds os the green part which is highly flavorful and very edible. This is a must that it is used in this dish and not discarded.

Cook the fennel sabsi for 15 minutes on low heat which is done on stovetop entirely. Enjoy this with naan or chapati. It can be enjoyed with shearmal and taftan too as well.

The list goes on etc. and of course I love latamore and luther vandros, the beatles, rolling stones and Yusef Islam is also one of the greatest voices and Allah blessed them all with such great talents.
