Butterbean And Coconut Curry

Actually I remember when I was a lot younger when I went on home visit to my dad’s house from the group homes. There were lots of times he talked to me and treated me like I was one of his subordenets. The highest rank he reached if I am not mistaken was sargeant first class. He was a non commisioned officer. He explained to me how you climed the ranks without going to prestegious places like West Point Military Accadamy.
This is the place where President Eisenhower went to and he was a briliant general serving in the European Theatre in World War Two along with General Patton and a couple of other generals. This is how we beat the Nazis. My paternal grand uncle who’s name was Victor Jacobe served under one of these generals. My dad said he was the translator because my Uncle Victor knew German.
About commisioned offcer status in the military that you have to become either a nurse or a doctor. My dad was a medic in Korea. He also told me about post WWII Europe because he knew I was reading a lot about it at my liesure and I can’t lie at all on my dad when that bitch was not hovering about him like an albatros that he was a completly different person. This is where I got along with him the best and also him and my paternal grandfather asked me to do a majority of the chores which I did without grumbling.
I used to go to the grocery store too with my mom without a fuss too and she used to drag me down the generic isle. To this day if I see a name brand cheaper then the store brand then I buy this. My mom taught me about price comparison. Also my maternal aunt’s first husband was a Nazi and so was she and I am glad I did not meet those two. Her first husband died in Russia during the war. I do not know who killed that SOB but I wouldn’t doubt that it was an American or an allied soldier.
I learned this after I took my DNA test. It was confirmed by my relitives on my mom’s side of my family in Germany. I do not talk to them because they are too saddity to my liking and I hate uppidy ass folks. My Uncle Victor found a gun off one of the dead Nazis and brought it home as a trophey for Opa Jacobe who was his brother. He had that with him until after he died and my dad sold that piece.
My dad said Opa Jacobe used that gun one time only because he shot at a cat who went crazy. Other then that the old man would not harm an animal. My dad said he got upset and then Opa Jacobe apoligised and then took him for a banana split.
Thanks for putting up with me because I am still grieving the loss of my dad. I found out also my cousin passed away 2 years ago recently and I will talk about this in another post Inshallah. Please give me some time and now we will talk about this yummy bean dish and I so badly want to make this again. I love this bean a lot and I love the taste and aroma of coconut.
First make Garam Masala and Curry Powder set it aside. Add 1 cup of either dried butterbeans or lima beans in to a bowl and fill it up with water and add 1 pinch of baking soda. Let sit for 1 hour to soak and drain and rinse the beans. Also you can use 1 bag of the frozen in its place too.
In an instant pot or another multi functional cooker turn on the saute function for 7 minutes. Let it get hot and add 1/4 cup of either corn, canola or vegetable oil, 2 tbs of either butter ghee, almond oil or coconut oil. Add 1 pinch of hing, 2 curry leaves, 1 onion or shallot to cook until it is brown. Add 3 cloves of garlic, 1 green chili chopped, 1 pinch each of pink salt, turmeric, paprika, red chili powder, the garam masala and curry poweder that I instructed you to make fresh so you can have it on hand before you start making this dish.
Add 1 chopped tomato and cook until it turns mushy. Rinse the beans again that you have soaked to remove the taste of the baking soda if you are using the dry beans or add 1 bag of the frozen beans which all of the prep has been done for you. By this time that the instant pot or whatever multi functional cooker you are using should be off. Just in case if it isn’t then select cancel. Add 4 cups of water, select pressure cook for 20 minutes and make sure it is on sealing on the pressure cook lid and let cook. After it is done at this stage the cooker shuts off and then you can place the steam diverter and when the pressure is gone then it is safe to open the cooker. Stir and add 1 can of unstweetened coconut milk. Stir again and make sure once more you repeat but this time for 10 minutes.
This nice and creamy bean recipe is ready to enjoy with either rice, millet or even whole grain naan. However this is a hit in my house because It is just now Mr. Riaz and me again. We love our food spicy and it is what it is. Also it is great with a little achar on the side. P.S.
