Curry Leaf Chutney

Actually this is a recipe I have tried a long time ago that was an archive picture without a recipe attached so it is getting written about right now. On high heat in a wok or cast iron skillet and this time a small one is ok for this step in this recipe add 4 tbs of either corn, vegetable, canola or peanut oil, 1 pinch each of mash ki dal and black urad ki dal. They are really the same thing almost is because the mash ki dal does not have the black coat on it like the black urad ki dal is but it is the same type of lentil with the black skin removed. They can be bought seperately and they always are.
Let the dal brown and sputter then add 1 pinch each of hing and mustard seeds and let the mustard seeds crackle. To this you can add 5 curry leaves, 1 onion or shallot cut in to half moon slices, 1 small marble piece of tamarind, 1 green chili chopped, 1 dried red chili long or round, 1 pinch each of turmeric, pink salt then stir and cook until the onions soften by reducing the heat to low. Turn off heat and cover and let cool completely then place in a mini processor. Mine came with my immersion blender as part of a set and it is amazing. It is fantastic for chutney making. Add the cooled mixture and 3 tbs of plain Desi yogurt then pulse until it is combined and smooth. It should like what it does in the picture above.
This is fantastic for kabab, idli, dosa and vadas. It can even be enjoyed with handvo which is a lentil cake and these are covered already in previous posts. This dish is highly appropriate for tea time as well when you serve it along with kawa or even chai or you may opt out and have sherbat and perfect for Iftar and Sahoor during Ramadan as well.
