Great Northern Beans With Smoked turkey Etc.

Actually this a brand new post this time around in a way. Obviously I have made this dish since I was in my 20s and I really love this very much. Take 1 cup of dried great northern beans and place them in a bowl that is big enough to hold cereal. Add 1 tiny pinch of baking soda, fill up the bowl of water. Make sure the water covrs the beans and let soak for 1 hour.

Turn the instant pot on to saute on high setting for 10 minutes and add 1 oz of either vegetable oil or corn oil. Add 1 pinch of peppercorns to grind in a mortar and pestle and set aside. Add 1 onion or shallot and let brown and add the contents of mortar and pestle, 3 dashes each of seasoned salt and mrs dash. Add either 1 drop of hot sauce, 1 pinch of red chili powder, red peper flakes or 1 chili of any type. If using habenero or scotch bonnet deseed it first before using these. Add 3 cloves of garlic chopped. Add 1 pinch of paprika.

Add 1 piece of smoked turkey. Farm City is the zabiha halal meat store I go to here in Chicago. They carry smoked turkey like the drumstick and the tails which are absolutely perfect. You can also add 6 pieces of zabiha halal turkey or beef bacon if you wish or add unsmoked meat which are 1 lb or 1 kg of oxtails, veal necks or chicken then you have to use 3 drops of liquid smoke to the food in the cooker. Rinse and wash the beans several times to remove the baking soda taste and put this in the cooker. If you are a vegetarian or vegan you can use just liquid smoke or Morningstar Farms stribbles. After adding the beans to all of this all you have to do is stir. By then the cooker will shut off on its own. You can toggle the cooker settings from high and low by pushing the buttons on the saute, pressure cook and slow cook settings especially. Make sure that you have the pressure cooker lid on and tha it is set at sealing position.

Select pressure cook on high for 25 minutes. Serve this with either corn bread or hot water bread. This is a very basic soul food dish and very tasty and filling too as well.
