Turkish Grilled Chicken

Hello I am giving you a brand new post and I was curious on if there are any Turkish recipes for grilled chicken. I found one and however I have embelished it to make my version of it. I hope You will love it as much as we do here in my house. This can be done by making either the kabab type with only chicken like 1 lb or 1 kg of chicken I used the leg quarters here and I took it out of my deep freezer which I now have. It belonged to my youngest daughter and she just gave it to me which is really nice of her and it works great because it is nearly new. You can use boneless chicken breast cut up in cubes or chicken keema which can be put on skeweres and grilled.
I decided to use chicken leg quarters and really you can use any part of the bird you wish. I used two of them and I used my boning knife to cut the drumstick off of the theigh. This is my favorite pat of the bird itself. If using the chicken keema which means mince in Urdu, add 1 handful of chakki atta as a binding agent. First thing first please wash your meat before seaoning and cooking. In my opinion there is nothing nastier then unwashed meat and produce. You do not know who has been handling your food period.
In mortar and pestle grind 1 small piece of cinnamon, 1 pinch each of cumin seeds, peppercorns, empty contents on to the chicken. Add 1 pinch of either sea salt, kosher salt, pink salt, vegtea seasoning or bullion powder. You may even add 1 bullion cube in its place. Add 1 pinch each of paprika, red chili powder for a little kick and turmeric. Add 3 dashes of maggi or knorr aroma, 1 capful of lemon juice. Add 1 dab of butter ghee or 3 tbs of either olive oil or grapeseed oil. Mince 3 cloves of garlic and smear it all over the chicken. You may score the chicken as you wish by making an incition being careful not to cut through to the pieces of the bird. This allows more flavor and it speeds up the cooking time too, Cover and place in the fridge for an hour. If using the chicken keema or boneless chicken breast then place them on a skewer. Repeat until all of the chicken meat is used up. Lay one piece of alminum foil on top of an electric grill like I have and spray this with cooking spray. Lay the chicken pieces or the chicken skewers on the grill and it should be at 4 then cover and set the timer for 15 minutes. Keep flipping every few minutes. Repeat and cook some more until they are done. You can also cook this on a regular charcol grill and a gas grill too. This is only for grilling and this is such a lovely dinner with a salad and also with cacik which I posted the other knight. It is almost like raita but it is not raita at all. The Iranians eat similar and I think I will do another dish by them in the future Inshallah.
