Indian Coconut Milk Rice

First I want to explain that again I am feeling sad it is because my mom’s friend has lost her hubby. Those wonderful old people has always had my back and I have known them since I was in high school. I can not thank this man enough though. We had endless coversations about my mom, books, my travels, how many languages I speak, my kids and other family members especially when I had became Muslim when I was 28 years old that I wasn’t put down or anything just because I had changed my religious beliefs.
He even saved my life by taking me to the hospital for emergency surgery when I had that ectopic pregancy. My oldest was with her grandpa at that time and my youngest was at their house until another family member came to pick her up. They loved my kids a lot too. Plus they looked out for me after my mom passed away in October of 1985. They wiped my tears after my mom’s death and also we talked about music a lot. Tomarrow Mr. Riaz and I are saying our last good byes to him and it is very difficult. Also this is Father’s day and I want to tell him and my dad happy first Father’s day in heaven to this old man and my dad. I miss both of them very much.
Another thing is those old people were very happy that I can cook and that I enjoy cooking. What you do need is a large caldero and place one cup of either brown or white basmati rice in to a bowl and give it a good rinsing to make sure the starch is removed. You must wash your rice before cooking it and make sure that it water is clear then set this aside.
In a mortar and pestle add 2 each of cloves and green cardamom, 1 broken piece of cinnamon stick, 1 pinch each of black peppercorns, fennel seeds, grind in to a coarse powder and set aside. Add 1 pinch of pink salt and stir.
Turn the heat on to high and add 1/4 cup of either corn oil, vegetable oil or canola oil. Add 3 tbs of coconut oil to this. Add 1 bay leaf, 3 curry leaves, 3 cloves of garlic, 1 small piece of ginger both are minced and added to the pot. Add 1 chopped green chili, the contents of the mortar and pestle and stir.
Add the rinsed rice and stir it in to the masala infused oil. Open 1 can of coconut milk then stir and add 2 1/2 cans of water to this. Add either 1 pinch of cilantro or mint. Turn heat to low after it comes to boiling point and let cook for 20 minutes. Brown basmati may take a little bit longer but give or take it is about 5 minutes longer. When the grains of rice are soft and there is a tiny bit of liquid left over after cooking, this I want to inform you it is not a big deal at all whatsoever. Just turn the heat off and let stand for 20 minutes witht the pot still covered on dum. Sorry this is only stovetop method this time. This is amazing to eat with kabab and achar.
