Actualy this is a new post and I am going to do another new one right after this and back to doing posts for my archive pictures which I have at least 13 more archive pics to go yet to right a post about and then from there are brand new recipes like this one.
This is a simple and yet delicious Italian dish and it is like an appitizer really. Also one of my high school besties suggested that I would try this out and I told Mr. Riaz about this and he thought it was funny. Also he is a judge and yeah I have friends in high places if I ever get in to trouble which I am not going to try to do anything else but keep my damned nose clean as usual.
What you will need is 2 fresh red tomatoes. The ones I have in the house I ended up chucking in to the freezer so they will no longer work here because they would have been way to juicy. Slice this thin and add this to the storage container.
Slice some fresh mozarella cheese thinly. You will need 1/2 a package of mozzarella cheese. Alternate the slices by placing a layer of sliced raw fresh tomato and fresh mozzarella cheese. The brand I used is called Belgioioso which is permitted to eat. It is halal. Add 1 pinch of either pink salt. kosher salt or sea salt. In a mortar and pestle grind 1 pinch of peppercorns and add to the tomato and cheese combo along with 3 tbs each of balsamic vinegar and olive oil. Add 2 pinches of either fresh or dried basil.
I didn’t have fresh basil and I have dried and I used what I have here at home. Mix it up slightly and refridgerate for 2 hours then eat with a meal that consists of pasta or you can eat it with thick crusty Italian bread.
