Tostadas

Actually I want to start the post off as a link that you will need before making these yummy things. You will need to make Frejoles first. Mr. Riaz ate 3 of these when they were done. Also you will need 1 package of tostadas which are flat corn disks that are sold in a lot of stores selling Mexican groceries.
Here mine was vegetarian because of the Mexican crumbing cheese and either yogurt or sour cream may be added too as well. For the meat you you can add 1/4 cup of either olive oil, corn oil, canola oil or vegetable oil to the wok or large cast iron skillet and add 1 onion or shallot, 3 cloves of garlic all chopped and add red chili that has been soaked in 1/4 cup of water so it can soften.
Add your rinsed ground meat of 1 kg or 1 lb of chicken, beef, lamb, goat or turkey. Brown and add 4 shakes of adobo or goya seasonador, 1 pinch each of cilantro, culantro, oregano and 1 pinch each of peppercorns and cumin seeds and 1 small piece of cinnamon stick ground in to a coarse powder.
Also you can do this in an instant pot on slow cook method with or without the need of using saute function first. Also you can add 1 beef brisket or even some chicken breast in there and I would say 1 lb or 1 kg would be great. The strange thing for this one I did not do the meat part as a rough draft. Sometimes I get an idea and I go with the flow. Beef shortribs and even goat ribs and veal will be splended as well and then cook this for between 3 1/2 hours to 4 hours. The you can finish it off if you want to add the air fry lid and select roast for 20 minutes so you can have a nice crust on the meat. This is totally up to you and how much time you have.
You will need to make both Pico De Gallo and Guacamole also if you choose to. I made the pico de gallo because my tomatoes were frozen and it won’t work LOL.
Now to assemble which is the good part you will need to put the frejoles on the tostada itself. I bought a package of these and the mexican crumbling cheese before I made these. I sent Mr. Riaz to the store for avodado and showed him how to get a good one. You feel them up to see if they are too firm or too soft. I want it just right neither too soft or too firm. Allumduallah he listened to me.
Also you can chop 1 fresh onion, 1 fresh tomato and 1 fresh green chili if this is what you want instead of using the pico de gallo. I used the pico de gallo because it was a lot easier. Mr. Riaz knows I love Boston baby lettuce which gets washed and and torn in to tiny pieces. I used the salad spinner to spin out the moisture from the lettuce.
After spreading out the frejoles add the pico de gallo and or guacamole if you wish then add the meat if this is what you want and you add these by the teaspoonfulls. Sprinkle the Mexican crumbly cheese. When you break it apart that it crumbles easily. Add 1 tsp of sour cream or plain desi yogurt like we did. Top with lettuce and if you are using fresh avocado like I did then place two slices on top and then you can add the fresh onion, tomato and green chili if you are not using guacamole and pico de gallo.
You can add a last minute garnish of cilantro if this is your thing too. We had this with elotes. Also you can drink aguas frescas of choice. I hope you do enjoy my posts. Also to the new followers I want to say thank you for following my blog.
