Stuffed Cornish Hens

Hey folks these are the last 10 posts from archives and I am nearing my end and then I can focus on bringing you more new content in the future Inshallah. You will need to cook rice and here is the link here for the stuffing. Plain Jasmine Rice Etc. is what you will need and the other type of grains you may have to pressure cook by using an instant pot which is a lot easier. It is 1 cup of random type of grain of choice such as rye kernals, millet, sorgham, buckwheat groats, barley, spelt or wheat berries and 4 cups of water which gets put on pressure cook setting on 15 minutes.
Place the steam diverter on the vent of the instant pot and tap quick release. When pressure is gone you can carefully open the cooker and check to see how the grains are. Just set this aside and for cous cous or bulgar wheat then you can use one cup of this to 3 cups of water and let come to a boil and then shut heat off and cover and let sit for 20 minutes on stovetop. Be sure to cook this on high heat.
For regular oven preheat to 350F or 180C. The instant pot needs to have the same temp and it is for 2 to 4 Cornish hens which depends on how many people are eating with you. In a mortar and pestle grind 1 pinch each of celery seeds and peppercorns. This gets added to the birds after you wash them removing the funk from them.
Add 3 tbs of either grapeseed oil, olive oil, corn oil, canola oil, peanut oil or safflower oil to the roasting pan and make sure it is well coated with the oil. Mince 3 cloves of garlic and finish seasoning the birds in this manner by using, this time you can place the birds inside the roasting pan.
Either add 1 pinch of pink salt, kosher salt, adobo, vegtea seasoning, sea salt, bullion powder or 1 bullion cube crushed. Add your herbs like 1 pinch each of tarragon, marjoram, lovage, savory, basil, oregano, rosemary, chives and parsley. Add 1 drop of hot sauce, 1 capful of lemon juice or lime juice. Otherwise instead of the lemon juice or lime juice you can add the 1 capful of either white vinegar, tarragon infused vinegar, balsamic vinegar, apple cider vinegar or balsamic vinegar instead.
Make sure you season the inside of the birds as well and then stuff them with whatever type of grains you are using. Cover the roasting pan and let bake in the oven for 30 minutes. Check on them and repeat until they are done. Now for instant pot wrap each cornish hen in 1 sheet of parchment paper and then place 1 sheet of aluminum foil over it and then place a trivet at the bottom and 2 cups of water. Place a baking utinsel that is made for instant pot on this trivet and set the air fry lid on bake and select 351F for 30 minutes and open and check and see if the bird is cooked. Repeat until done.
If you are using an instant pot you may have to do just one at a time. However if you are going to cook multible it is best you stick to using a regular oven. It is best to eat this with a nice crisp green salad with olive oil and vinegar for salad dressing. However I even have eaten a salad with hemp seed oil and the grocery store I go to sells it.
