Tori Peshawar Area Zucchini Or Yellow Squash Curry

This is another archive post from the the Peshawar area brought to you by yours truly. I hope you will like this as well as we do. This is the true Peshawar area cooking and not some made up immitation, All you have to do is ak anyone from Peshawar what their food is like and they will tell you.

I have family who lives in Peshawar. These are my family also. One thing I strive for authenticity when it comes to my dishes. It is because the real McCoy tastes always much better then the imitation. Before you get startred grind in a mortar and pestle in to a coarse powder 1 pinch each of fenugreek seeds, mustard seeds, coriander seeds, black peppercorns, cumin seeds, black cumim seeds, shai zeera meaning caraway seeds in Urdu.

Now after you are done with that you can start prepping your vegetables. Wash and slice 2 zucchinis or Italian yellow squash. However you can do one of each too. On high heat in a medium coldero on hi heat add 1/4 cup of either olive oil, corn oil, canola oil or vegetable oil. Add 1 onion or shallot cut in to half moon slices and let them cook until they are brown.

Add 1 pinch each of red chili, turmeric powder, paprika, stir then add the contents of the mortar and pestle. Peel wash and mince 3 cloves of garlic, 1 tomato and 1 green chili washed and chopped. Let the tomato turn to mush and add either your zucchini or Italian yellow squash. You can also use a combo of the two and turn the heat down to low and let cook for 25 minutes. Repeat until soft if necessary, Add 1 dab of tomato paste and stir until it disovles. Let this thicken and shut heat off. Enjoy with naan.

The list goes on etc. and of course I love latamore and luther vandros, the beatles, rolling stones and Yusef Islam is also one of the greatest voices and Allah blessed them all with such great talents.
