Aloo Bangan (Potatoes With Eggplant)

If you want to hear something funny is that I thought I had this post already on my draft here in WordPress and I had to go to Facebook for an archive picture to go with this post. However I have the rough draft on my icloud notes which is an amazing place to do a rough draft for a blog. Either that or samsung notes is great too or any other notepad feature for any smart phone or even your pc will do too as well.

In a mortar and pestle grind either 1 long red chili 1 Kashmiri chili or 1 whole round red chili and 1 smal piece of amchur which gets ground in to a coarse powder and set aside.

chop 1 large egplant in to cubes, 2 potatoes scrubbed diced in to cubes and put in a large mixing bowl of cold water then set this aside. In a coldero add 1/4 cup of olive oil, corn oil, vegetable oil or canola oil on high heat. Add 3 tbs of mustard oil, 1 pinch each of hing, mustard seeds and let mustard seeds crackle. Add 1 onion or shallot and let them fry until brown.

Add 3 cloves of garlic minced, the contents of the mortar and pestle, add 1 pinch each of pink salt and black salt, stir add green chili chopped, 1 pinch each of red chili powder, turmeric and ajwan. Stir and add 1 frozen red tomato chopped and let it turn mushy. Add the eggplant and drain then rinse the potatoes. Add those to the pot too and stir and reduce the heat to low and let cook for 25 minutes. They have to be soft when they are done and you may need to cook them for another 20 minutes or until they are done. Garnish with either 1 pinch of either cilantro or pudina (mint). The parenthises is the English translation for the Urdu word pudina meaning mint. Serve with either yogurt or paneer.

The list goes on etc. and of course I love latamore and luther vandros, the beatles, rolling stones and Yusef Islam is also one of the greatest voices and Allah blessed them all with such great talents.
