Corned Beef Pita Sandwich


This is the corned beef filling for the sandwiches.
Actually I am an insomniac. It is something I have to tell my therapist later since it is already 5:23 am in the morning. It is Wednesday which is my therapy day. However I was trying to relax by watching YouTube videos. Mr. Riaz got cranky with me and I had the tv turned down low so I do not disturb him. So I came out here to work.
This recipe is off the top of my head just like the post before this one. I get creative like that. This is an absolute me thing. Just below the featured image is what the actuall corned beef filling looks like. It involves 1 can of zabiha halal corned beef and as usual the damned key breaks on the can I am opening. I used the can opener and tried to pry it open with the pliers I got for the kitchen. Cans of corned beef are too damned annoying to open.
After opening this stupid can of corned beef, empty the can in to a large cereal bowl and chop either 1 shallot or onion either grilled or raw. If you are grilling the onion, add 1 oz of either grapeseed, olive, corn, canola, sunflower, safflower or peanut oil to a small cast iron skillet and fry until brown before adding to the corned beef. If you want it raw then the oil isn’t necessary. Smash 1 clove of garlic, Chop 1 dill pickle or mikta which are pickled wild cucumbers. The Middle Eastern grocery stores has them and they are by Zayed Brothers.
Gerkins can be used too because they are good and sour as well as crunchy. Add 1 tbs of mustard, 2 dashes of maggi or knorr aroma, 1 pinch of thyme. 3 dashes of mrs dash, 1 pinch of vegtea seasoning or bullion poweder or 3 dashes of Goya seasonador, adobo or seasoned salt, 1 drop of hot sauce. Mix well and set aside. Take 1 to 2 pocket pitas and cut in half. Stick each half in to the toaster and toast.
Take the toasted pita halves and stuff each one with the corned beef mixture and add 1 small piece of cheese of any type. From here you can eat just as it is or heat up in the microwave for 30 seconds. The remaining filling can also be used on chapati to make a wrap if you wish for anohter variation of this sandwich. Serve at lunch or at tea time.
