Thanksgiving Cornish Hens or Quails With Cornbread Dressing

Before I dive in to this post I want to address what is eating me tonight. I had to drink a mug of strong hot coffee so I can see my way to get through this very post. In Twitter spaces there was an asshole who is a J6er and he was being a fucking asshole as usual. I wanted to rip him to pieces for what he did. He litterally insulted my intellegence talking shit. I am not the only one that felt this way because he angered everyone else in this space too.
My dad fought and risked his life in Korea for crying out loud. He was in the very worst of the conflict and I already told you he was in Porkchop Hill. He could have easily ended up in a body bag. Bad enough this is the holiday season and my first ever without my dad being in existance so I am in my feelings and my dad fought for all of us to be free of dictatorship.
This orange bastard is a dictator wannabe who is trying to turn this country my dad and my great uncle Victor has fought for. My Uncle Victor was my opa Jacobe’s little brother. He fought in WWII to defeat Hitler so these damned Nazis would not come here. Bad enough they destroyed Germany and my mom seen it happen. She came here in 1958 and met my dad two years later here in Chicago. Their courtship was a whirlwind. They married two weeks after they met and three years later I was born.
Why am I telling everyone this? It is because I see you guys as family. This goes for the future readers of my blog too. This jerk In this space tonight really set me off because he did not want to own up to anything he did and he should have had a stiffer prison sentance. He said he worked out of group homes and this really set me off all the more because the group homes usually employ anyone that walks off the street just like they do a nursing home and these stupid fucks should never work with children at all period.
JFK Sr. was president and he too was a WWII vet as well, so was Bush Sr. and Eisenhower who was a general before he became president. These treasonous fucks slapped all of these fine gentalmen in the face that served honorably. I can’t forget my Uncle Marty and my Aunty Willow. They too were WWII vets and I hold them in high esteem too. My kisses to heaven to everyone I mentioned and a big fat thank you for their service so we can be free. Oops I am sorry Senator McCain who served in Vietnam thank you also.
Sorry for the profanity. It is how I express my anger and this really set me off now we can talk about the recipe for Thanksgiving. First of all preheat the oven for 350F or 180C. make your Cornbread/ Halal Cracklin’ Bread from this link. There are a couple of others too but one is with turkey and for chicken too. Obviously I prefer this link for now so you do not get sidetracked.
Take a large mixing bowl and fill it up with water. It would be a gallon or 4 liters of water. Add 1 lb or 1 kg of chicken livers and gizzards to this water. Add 1 pinch of kosher salt to clean them and rinse them a couple of times and fill it up and add 1 capful of white vinegar and keep rinsing and draining until the water is clear. Let the water drain and while you are doing this take your roasting pan and add 4 tbs of either corn, canola, avocado, grapeseed, sunflower, safflower or olive oil. Swish until well coated. Add the washed and drained chicken livers and gizzards,between 6 to 8 quails or between 1 to 2 cornish hens.
Season with 1 pinch of either pink salt, seasoned salt, adobo, Goya seasonador, vegtea seasoning sea salt, kosher salt or bullion powder. You can also use 1 bullion cube in its place If you are using infused sea salt depending on which you are using then omit the chili powder or hot sauce and liquid smoke. Grind 1 pinch of peppercorns to be added and add 3 shakes each of mrs dash, lemon pepper, worcestershire sauce, maggi or knorr aroma, 1 dab each of marmite, hot sauce and liquid smoke if using, 1 pinch each of melissa aka lemon balm, sage, rosemary, chervil, lovage, savory, thyme, tarragron, marjoram, 6 stalks of celery, 1 onion or shallot both chopped, 2 cloves of garlic minced.
Cover the roasting pan and stick it in the oven for 30 minutes at least 3 times. This will allow the meat to get done and if it is not done all the way then 1 more time should aught to do. Actually there is enough juice from the quails or cornish hens along with the gizzards and chicken livers. From here take the cornbread you just made and crumble it up and make sure the juice is sopping it up. There is enough juice here. Water is not required because it made its own juice when the meat was cooking and the celery provides it with great flavor as well as moisture. After the whole entire cast iron skillet of cornbread is added then mix the contents and cover and cook it for another 30 minutes, open it and stir again and repeat for another 30 minutes.
Enjoy this with my cranberry apple jelly and sweet potato pie for desert. By the way this dinner almost didn’t get made because Mr. Riaz brought me quails instead of Cornish hens. He had me change the title of this post at last minute and he was in the doghouse. I showed him what Cornish hens look like so I hope he understands from now on out. Next time I will make with Cornish hens as originally planned and place the pictures in the offset above. ^^SCROLL UP AND SEE^^ Ok Mr. Riaz did enjoy it.
