My Birthday Present Is A Meat Grinder/ Homemade Raw Keema (Ground Meat)

Actualy this post has written itself without a rough draft. My youngest daughter knew I wanted a meat grinder for my birthday so she got me one from Amazon. I promptly went and bought some chicken breast and I made some chicken keema.
Keema also spelled queema means mince meat in Urdu. However I told my family that I am sick of buying keema in the store and these people don’t wash off the meat before they grind it. To me this is extreemly nasty so I decided to make my own keema for now on. My dad had a meat grinder when I was very small.
I decided I want to grind my own meat for now on and Mr. Riaz hooked it up. There is no overhang on my counter and on my kitchen table that I bought from Ikea. However before using this gizmo that I washed it before I put it together and Mr. Riaz hooked it right up and put plastic over it to keep it clean. All I did was take the bag off of my meat grinder and washed off my chicken breast.
Chicken breast is a soft meat compared to beef, lamb, goat and veal. Chicken and turkey breast is ideal for grinding and making keema. I cut it in small chunks and for tougher meat like what I mentioned before has to be cut in to very small chunks. When this is done then wash it again to make sure there is no blood coming out of the meat. Put 1 or 2 pieces in to the grinder and turn the crank and keep going until you do not have any more meat to grind. This was 2 chicken breasts that I turned in to keema. From here I put in a sieve and washed a final time and shook it until there was no more water coming from the keema. It is ready to use in your favorite recipes.
Also before grinding you take your chicken or turkey breasts and make sure they are raw and unsmoked. I usually put my meat in to a deep freezer and I seperate it by pounds and put them in a zip bag to freeze and when I am ready I will remove one and place it in the freezer to thaw. This takes about a day. Goat, veal and lamb shoulder is excelent so is camel. If using beef then I suggest you use a brisket or chuck. Besides I adore turning the crank. With the motorized one you will never know when it will conk out. Manual for the win. Also you can use a heavy duty food processsor if this is what you wish. However please keep your meat cut in to small pieces and wash well before grinding. Oops you can also use fish fillets only of various types of fish which are too many to name to make fish balls. Duces!!!!
