Black Eyed Peas Sambar

First I want to say is happy new year. This is the first post of 2025. and my stomach is in a damned not because shitty Donny managed to steal another election. The worst part is the hell with what happened 4 years ago and them treasonous fucks including the main traitor need to be put in Gitmo.
I am still realing from my dad’s death I look at his funeral flag and I cry because these idiots are killing United States of America. President Carter just had his funeral and shitty Donny and his ho wife Melania had a gaul to show up there. President and Mrs. Carter were very kind people. I was a a kid when Carter became president and he caught flack for nothing and these douchebags left him holding the bag which is unfair.
The Repugnacants were outraged over Watergate. By the way they might as well get over it. No one told them to go break in to DNC headquarters. No one twisted tricky Dick Nixon’s arm to do what he did period. Also I have been out of sorts still grieving for my dad. I just needed time and that is all. Now I am going to show you how to make this particular type of sambar.
First make sambar masala and here is the link, Sambar Masala is an awesome masala for sambar. Soak 1 cup of black eyed peas in 3 cups of water and add 1 pinch of baking soda then let soak for 3 hours and rinse the beans to make sure the baking soda is removed from the beans. This is cooked in a an instant pot. Add 1/4 cup of vegetable or canola oil. To this add either 1 tsp of either coconut oil, mustard oil or butter ghee. This is done in the instant pot on saute function for 5 minutes.
Let it get hot and add 1 pinch each of hing, cumin seeds, fenugreek seeds and mustard seeds, 3 curry leaves. Let the whole masala splutter. Add the sambar masala, 1 pinch each of turmeric, red chili powder, turbidano sugar and pink salt. Add 1 marble size piece of tamarind, 2 pinches of either frozen or descicated coconut.
Stir add 1 shallot cut in to half moon slices, 1 green chili , 1 tomato which are all chopped, 1 small piece of ginger and 3 cloves of garlic minced. The veggies of choice are 1 drumstick, 1 can of jackfruit or baby corn drained and rinsed several times. If using jackfruit be sure to fry it in the oil at the start of making this sambar.
Other choices are 1/4 cup of tindora, mixed greens such as mustard, spinach and turnip greens or you can use it by itself, lotus root, beets, carrots, mixed veggies, unripe mango, cluster beans, green beans and or 3 radishes quartered. You may not need all of these at all. Just pick several types you want to use in the sambar because it is just a mere suggestion.
Take the rinsed beans and add them to the instant pot. At this point the instant pot had shut off but you have to press cancel to turn off the instant pot cooker. Add 2 quarts otherwise 1/2 gallon which is about 2 liters in metric terms of water. Select pressure cook for 20 minutes and start. Make sure it is on sealing when you do for 20 minutes. Serve this with either rice vada dosa or idlis.
