Udon Noodles Soup

Hey folks, this is my first time I made udon soup. It is warm and comforting on a cold day. I was watching several people who live in Japan and they are always cooking. They are lifestyle bloggers and cooking is a part of it and I finally got off my bum and gave it a go. However it is very delicious,
On the last post I told you you have to use this spice blend. It is called Japanese Five Spice Mix, Make this and set it aside. Boil 1 gallon or 4 liters of water on the stove. add 1 drop of sesame oil and a pinch of pink salt and boil according to package directions. I had to rush out and buy udon noodles because I thought I had some and discovered I didn’t. I had to hunt and peck to see if they had any because from what I seen there wasn’t that many.
I ended up getting rice udon noodles instead. I bought several packages including the ones I usually use. I then hurried home to cook. After boiling the udon, drain it and rinse with cold water. I seen they were a little hard so I filled up the pot and placed the noodles back in and boiled for another 15 minutes and drained and rinsed again.
In another pot add 1 lb of either beef or chicken and boil for 1 to 1 1/2 hours so you can make a nice stock, 1 packet of dashi powder or 2 pinches of bonito flakes and kombo seaweed to make dashi from scratch. Add 1 pinch each of pink salt and turbidano sugar. Peel and wash and cut 3 big carrots, a small zip baggy of lotus root. I got fresh and blanched it. Blanching Vegetables is the link I want you to see to show you how I do it but this is done in advance put in a small baggy and put in the freezer. Add 1/4 cup of fresh mushrooms that have been washed or dried mushrooms. Add 4 chopped green onions, 3 cloves of garlic and 1 small piece of ginger minced.
Crumble 1 sheet of noori which is the type of seaweed to make sushi with. Add 1 capful each of non alcoholic mirin and either soy sauce, panzu , tamari or Braggs coconut aminos. Add the contents of the mortar and pestle. If you are not using chicken or beef then you can add 1 lb of any firm fish you wish or add 4 sticks of surimi which is imitation crab. Add 1 small dab of miso and or Burmese AKA Besan (Chickpea Flour) Tofu are the only optionals. Add the noodles back to the pot and 2 chicken eggs at the end and let them cook for 5 minutes and shut the stove off.
