Sugar Free Bunt Cake

Actually this is an old picture and I am now just talking about it. This was Mr. Riaz’s birthday cake over 20 something years ago and now just posting the recipe. However I am going to wing it on how I actually made this cake. First you preheat oven to 400F or 200C.
In a large mixing bowl with a sifter inside add 1 cup of all purpose unbleached flour, 1 pinch of pink salt, by the way if it is coarse then grind it in mortar and pestle until it is a fine powder then add it to the sifter with the other dry ingredients. Add 1 pinch of cornstarch, 2 pinches of baking powder, 1 tiny pinch of baking soda, 1 pinch of yellow food coloring for yellow cake, orange food coloring for orange cake, 3 pinches of cocoa powder if you want chocolate or for white just leave as it is.
Add 1/4 cup of nido, 1 drop each of alcohol free vanila and almond essence, you can add orange essence or 1/4 cup of orange juice for flavoring instead of almond if you choose. 1/4 cup of agave nectar, 1 egg, 2 cups of water a little at a time until it is smooth and lump free batter, 1 tbs of either almond oil or butter ghee, use an electric mixer to make it light and airy, also another variation is 3 tbs of either cocoa nibs or lilly’s sugar free chocolate chips. Be sure to. fold the cocoa nibs or lilly’s sugar free chocolate chips in to the batter with a large wooden spoon. Actually the cocoa powder if you are using goes right in when you add the dry ingredients in the beginning.
Instead of using water you can use diet pop or sparkling water instead but then you have to use just only the vanilla essence which is alcohol free. sugar free colas like pepsi or diet right is fine and so are diet dr pepper, 7up, diet sprite, diet cherry cola, ginger ale and orange pop. Hey you can even turn this bunt cake in to having a mocha flavor by adding 4 tbs of very strong black coffee that has been freshly brewed along with the cocoa powder. This is another suggestion on how to make different types of bunt cakes.
Spray the bunt pan with cooking spray and make sure it is well coated. Take 3 pinches of unbleached all purpose flour and sprinkle and shake until it is well coated or use something called baker’s joy which is like cooking spray that provides a dusting of flour in a can to make it a lot easier. It can be bought at major retailers. Bake for 20 minutes and then check with toothpick or fork to see if it comes out clean. Repeat for another 20 to minutes or until done then let cool, invert sprinkle with sugar free powdered sugar type or ice with sugar free icing.
