The Many Faces Of Homemade Ramen Noodle Soup

I have an elephant in the room situation again. Please hear me out readers and I will get the recipe to you very shortly. First let me get on my soapbox to clear my mind or I will not be able to write this post and it has been a while. I aplogize about it. I am very angry right now at someone who has a gall to send me a flying monkey on Bluesky.
For those that do not know my congresswoman is retiring and she has mighty big shoes to fill and I want to know what each candidate what their issues are and I have every right in the world to do so. One is a podcaster who is a Gen Zer. She may be anti trump like I am but she seems to can’t answer my questions on the issues she stands on and recently sent me a link to look at her page.
That is fine and dandy because it looks good on paper only and lies are easily printed. I am a bookworm and nothing gets passe my eyes. Her fan base was attacking me and I had to block them. I inboxed her on Bluesky and told her I am not the damned enemy here. I am a voter and I have a right to know the issues she stands on. I never heard of her in my life until she started to run for my congresswoman’s seat.
To me she is wet behind the ears and inexperiensced she never served in any political office on a local county and state level and I am not going to squander my vote on someone I do not know anything about. I also told her in an inbox message about her fan base trolling me and I had to block them and I hope she is not encouraging dirty politics. and I have had more then enough. I told her and the clowns I blocked my daughters are millenials older then she is. Also no one that I know IRL accronym for in real life dares to disrespect me like I did. She even dissed Lincoln.
However so what he was tall. It is the way he was made and pituritary gland controls how someone grows. I also told her as I closed out the dm meaning direct message I will not vote for her even if she ran for dog catcher. However I want someone that is more experienced and she is our state senator here in Illinois because of her experience of standing up to a monster named DONALD TRUMP. How do I know if this young whipper snapper is not going to cave? We have more then enough trouble already about our politicians to sell us a bill of goods and turn around and fuck us all up our asses and I mean seriously.
I am going to miss Congresswomanand I mean seriously she is the one retiring. She is a legend here in Illinois and I live in her district. With that enough said and thanks for letting me bend your ear.
For this optional ingredient Curry Powder you can use it with without dashi. You can use the powdered dashi which is sold at many Asian stores or use 2 pinches of bonito flakes which is from tuna and kombo seaweed. You can crumble a sheet of nori which is the seaweed used in making sushi if you choose to also. It can be used with a bullion cube or 2 tsps of bullion powder. There is the vegan bullion for vegetarians and vegans then you can still use the seaweed both kombu and nori.
Add 3 dashes of maggi or knorr aroma, 1 pinch of msg, 1 drop of alcohol free mirin, 3 dashes of either braggs liquid aminos coconot aminos, panzu tamari soy sauce or dark soy sauce. Add either 1 drop of oyster sauce or 1 dab of either shrimp paste or crab paste or 1 capful of fish sauce. Add 1 pinch each of tamarind, white pepper powder or 1 pinch of white peppercorns in mortar and pestle and grind in to a coarse powder, either 1 chili of any type or 1 pinch of chili powder. Omit if you are vegan I was a lacto ovo vegetarian that ate fish for added protien. I still eat lots of fish to this day. You can also add either 1 capful of lemon or lime juice too.
Add 1 capful of either Chinese black vinegar, lychee vinegar, fruit vinegar, red vinegar, rice vinegar or cane vinegar, hold on this is a part of the ingredient list. You will be instructed on how to construct this masterpiece in a bit so sit tight. Also this will require an instant pot. For cow’s tongue which you will need one is to preheat the oven for 400F or 200C. Just rince off the tongue and do not cut leave whole and add 1 cup of water and place in the oven for 1 hour or until the cow’s tongue is tender it may take up to 2 hours in the oven. ‘
If using goat’s or lamb’s tongues it is up to an hour in the oven and please do not cut yet. You do not want very tough tongues. This is done without seasoning. When done then you can go right ahead and peel and cut them in to tiny pieces. Please do not discard liquid. You may also need either 1 dab of miso ssamjang or gochoujang which is also another optional and not manditory.
Other protiens can be used like 1 lb or 1 kg of either goat, camel, beef, lamb, chicken, turkey, 1 cornish hen, 6 quails, 1 rabbit. I used beef shortribs and you can use oxtails too that would the part of beef you want to use and makes a very nice broth, 1 pound or 1 kg of shrimp peeled and deviended, any type of firm fish only such as shark, monkfish, perch, catfish, mackerel, salmon, cod, haddok or tilapia either steaked or filleted. This requires 1 capful of lemon juice to kill the smell.
1 lb of tripe that has the fat removed and please leave it uncut until after you clean it by using 1 pinch each of kosher salt and baking soda with a lot of water. At least fill up a large mixing bowl full of water and wash about 6 times with water then add 1 capful of white vinegar. Wash about 6 more times and the tripe is good to go. At this time it is very clean and from here take the kitchen sheers and cut this tripe in to tiny pieces then set this aside.
Now the veg options are bok choy you may need 1 small one or 4 baby variety, 1 zucchini, Italian yellow squash, or 1 large carrot or 1 handful of baby kind julliened. 1 small package of frozen lotus root, also you can add 1 can of banana flower drained and rinsed several times. This gets cut up in to tiny pieces, 3 frozen water chestnuts or 1 canned or you can also add 1 can of bean sprouts or bamboo shoots which also gets drained several times upon opening. Also you can add 1/4 of a head of nappa cabbage since it is so big and other types of cabbage can be used too as well. Add 1/2 cup of fresh peapods or frozen cauliflower or broccoli flowerets. You can use a can of unripe jackfruit if you fry it first after draining and rinsing before adding.
For more flavor and absolutly manditory 1 onion or shallot. 3 green onions chopped, 1 small piece of ginger sliced and 3 cloves of garlic minced, 1 small pice of lemon grass 2 curry leaves or 2 lime leaves. For combining the aromatics first is place instant pot on sautè function for 6 minutes, add either add 4 tbs of either peanut oil, corn oil, canola oil. Add 2 tsps each of sesame oil and chili oil.
Assembly is after you add the oil of choice after you put on sautè function and a the sesame and chili oils are added then you can add your onion or shallot and let it turn brown, the green onions, garlic, ginger, the lemon grass is what I chose, either 1 green or red tomato chopped, let it turn mushy, add vegan bullion if you want a vegan or vegetarian ramen noodle soup. I added the tamari because it is my choice, the maggi or knorr aroma gets added too 1 pinch each of white pepper powder, msg, tamarind, paprika or turmeric for color, red chili powder too.
I used the red vinegar all from an Asian store. There are other types of bullion like beef, chicken and even the crevette one which is either shrimp or crayfish flavored. I used the baby bok choy and lotus root combo. If you want you can use burdock root too providing the Asian stores have it. Chop your chili and add to this aromatics. You can add your optional curry powder if you wish too.
From here you can use the sliced cow’s lamb’s or goat’s tongues and the juice coming from it or adding the cleaned tripe, rabbit, camel, goat, beef. chicken, cornish hen, turkey, lamb, oxtails or beef shortribs which gets pressure cooked for 30 minutes then repeat if still tough. Obviously except for the tripe and the fish you can slow cook for 4 hours. You can also make dashi using 2 pinches of bonito flakes and kombu seaweed and using a sheet of nori then pressure cook the tougher vegetables in 1 qt or 1 liter of water after you do your aromatics.
If you want fish then cook the fish after you do your aromatics on sautè function. Wait until the fish turns opaque and shrimp turns pink before you add the water and dashi powder, or make your own dashi and do not forget to add the non alcohlic mirin. You can add your mushooms of choice too. If using portobello throw the stem away it is pure yucky and woody. To cook the noodles add 1 gallon of water or 4 liters and bring to boil on the stovertop. Add 1 drop of oil like vegetable oil and 1 pinch of pink sat to water and cook for at least 10 to 15 minutes uncovered. Add the ramen noodles and the best ones for this dish is by getting the plain ones that does not come with a seasoning packet.
The Chinese curly noodles will work just fine too. After they are done then take and drain and rinse the noodles and add it to the instant pot to nearly finish the soup. From here you can add a dab of either miso, ssamjang or gochoujang wich are the final optional items. From here you can hard boil 2 chicken eggs or open a can of quail eggs which are already cooked and ready to eat. You can add up to 6 to garnish your soup or you can fry a couple of eggs too. Add this also to the top of your noodle soup and add a little sombal, sirracha or even hoisin sauce. Enjoy this with matcha green tea and I apologise if this post is all over the place today.
